Happy Easter everybody! I feel it is time for a decadent strawberry chocolate cake, don’t you think? And this one is so good. It has a chocolate cake as base, with a generous cream cheese and whipping cream filling with chunks of chocolate mixed in, lots of fresh strawberries and some more cocoa thrown in, just for good measure. If you are into chocolate (who isn’t?) and if you like fresh strawberries the same way I do, this one is for you. I already published the recipe two years ago and have baked it several times since then. After some additional tweaks I felt I had to republish the recipe since it always, always receives raving reviews and was in desperate need of some fresh photos.

But before I get into all the details of the tweaks, I figured it would probably be easiest to give simple and clear instructions below for everybody to follow. Other than that I actually don’t have that much to add other than inviting you to watch out for this strawberry deliciousness and get your mixer going!

Strawberry Chocolate Cake

Serves: One 23-26 cm/8-9 inch ∅ springform
Cooking Time: 45min preparation + 35min baking time

Ingredients

  • Chocolate cake
  • 120 grams of butter
  • 50 grams of semi-sweet chocolate
  • 100 milliliters of buttermilk
  • 40 grams of unsweetened cocoa
  • 120 grams of icing sugar
  • 2 eggs
  • 120 grams of heavy cream
  • 200 grams of all-purpose flour
  • 1 teaspoon of baking soda
  • Pinch of salt

  • Filling
  • 500 grams of fresh strawberries, 400 grams can be frozen
  • 1-2 tablespoons of cornstarch
  • 50 grams of regular sugar
  • 200 grams of cream cheese
  • 250 grams of heavy cream
  • 30 grams of unsweetened cocoa
  • 50 grams of icing sugar
  • 100 grams of chocolate chunks

  • Ganache
  • 100 grams of heavy cream
  • 100 grams of semi-sweet chocolate, chopped
  • Fresh strawberries and mint leaves for garnish

Instructions

To make the chocolate cake, preheat oven to 180 degrees Celsius and butter a springform.

Then melt the butter in a medium-size pot on the stove. Turn off stove. Add the chocolate in small chunks and stir until chocolate is melted. Add the buttermilk, cocoa and icing sugar. Set aside.

In a large bowl cream the eggs for a few minutes and then add chocolate mix. Beat the cream separately until stiff peaks form, then add flour, baking soda, pinch of salt and whipped cream until incorperated. Pour into a buttered springform and bake for about 35 minutes. Check for a toothpick to come out clean.

Meanwhile start preparing the filling by slicing the strawberries in halves you wish to use all around the edges. Put them away. Cut the rest in chunks. Heat the strawberries in chunks with the sugar, and stir the cornstarch in a small bowl with a bit of water. Once the strawberries are boiling, add the cornstarch and let thicken while stirring for about a minute, set aside.

Beat the whipping cream with the cocoa and icing sugar. Add the cream cheese and cream both only for a little. Pour in the chocolate chunks, stir on low speed for a little and keep in fridge until ready for use.

Once the cake is cooled off, slice in half and put springform around the first layer again. Place the sliced strawberries around the edges facing outwards. Put the rest of the strawberry filling to cover the center. Let cool in freezer or fridge for a little before pouring the whipping cream mix on top. Put the second layer on top and put in the fridge for at least one hour or over night.

Prepare the ganache by heating the cream. Shortly before boiling, take off heat and melt the chocolate in it. Set aside and wait between 5-10min until the ganache has the right consistency. Shortly before serving take springform off gently and pour the ganache on top, creating the dripping effect. Garnish with some more fresh strawberries and mint leaves.

Notes

This cake keeps for a few days if covered tightly in the fridge.
