So this is definitely a cake you can make in advance. Yummy, yummy, yummy. And for that reason this recipe made it on the blog, so let’s enjoy this apricot pretzel sticks cake! Continue Reading…

Pumpkin Mousse Caramel Cake

Kürbismousse-Karamell-Torte

Does this pumpkin mousse caramel cake count as cream cheese cake? I don’t believe so as it definitely tastes more like mousse than anything and you may even serve it as an icebox cake. But be it as it may, I find this cake delicious, if you like pumpkin and caramel, this cake is for you. We will use a Biscoff cookie crust and these already give a nice crunchy and caramel flavor. The filling contains a lot of pumkin and then we are going to top if all off with additional caramel.

Delicious No-Bake Strawberry Cake

Gesunde Erdbeer-Joghurttorte mit Mandelboden

Update: I rewrote the recipe a bit in 2021 and took fresh pictures

It’s summer! Officially! So I need something fast, something refreshing and also something healthy. That’s why I invented this frozen strawberry cake, which can be done in less than 15 minutes. It is pleasing to the eye and everybody will love it, I promise. It may be one of your new go-to recipes. I at least have it stored as a new favorite. I honestly was surprised. I usually don’t invent cakes. I like to change recipes to me liking, I like to alter them. But start one from scratch? I don’t know what happened, but for some reason I just felt like throwing some strawberries together and hope for the best. I usually don’t mind following a recipe, but this time it was just an impluse reaction, why not mix strawberries with some crunchy almonds? I took quite a risk there, because this cake was a birthday cake for a friend of mine. And since he likes strawberries and since it is summer, I came up with this beauty.

Creamy Cherry Chocolate Mousse Cake

Kirsch-Schoko-Mousse-Torte

Today I am going to introduce you to an old friend I have, but in a new outfit, I am talking about the creamy cherry chocolate mousse cake I already have on my blog. I actually made the recipe simpler and added more cherries to the mix. Whoever knows me, knows that I am a sucker for fruity cakes, pies, and tarts. In this instance, I felt about double the amount of cherries would be just perfect. I am still proud though that I won a prize with the original recipe. The award was for me and a person of my choosing to visit the beautiful city Tübing in the south of Germany and actually attend the chocolate festival they display every year. If you would like to learn more, check out this post. For the dressed-up recipe I decided to go for a 20cm/8inch cake instead of 26cm/9inch cake, with about double the amount of cherries and a much simpler chocolate mousse with no raw egg in it. Sounds good, doesn’t it?

We Are Celebrating Life: Rich and Creamy Chocolate Cheesecake (No Bake)

Chocolate Cheesecake als kleiner Seelenschmeichler (ohne backen)

Guys, today is a special day for me. Exactly two years ago I had a horrible bike accident. Including hemorrhage. It is a special day for me as I didn’t get any long-term damage. Yeah, it did take a while for me to recover, but I made it back with a clean health bill. And since this is a special day for me, I always make a special cake on this occasion. Last year I made this vegan Oreo cake and the previous year I made one gigantic cookie with the cookie monster on top. Needless to say that I am a huge cookie monster myself. Yes, all of these cakes are very decadent and rich, I am celebrating life and don’t want to hold back. Yes, this year’s cake is decadent as well. This rich and creamy chocolate cheesecake is anything but healthy. In total we have 400 grams of chocolate and 600 grams of heavy cream. I promise you, if you are a chocoholic like I am, you will love this cake. But be warned, you won’t manage to eat more than a small slice. For that reason I made it in a 20cm/8inch cake pan because you really don’t need a lot to satisfy your chocolate craving. And I am saying this as somebody who can eat chocolate all the time, regardless if it is summer or winter. I will never understand why some people say they don’t need chocolate in summer. I definitely do. If you are the same, this cake is for you.

Iced Coffee Cheesecake, no bake

Eiskalter Kaffee-Cheesecake ohne backen

Iced Coffee Cheesecake you don’t have to bake! That’s the star of today’s post. People have told me that it tastes a little like tiramisu, but it does not contain mascarpone or raw eggs, this truely is a cheesecake, combined with whipped cream and coffee you will have creamy deliciousness on your plate. I didn’t go for the traditional cookie or graham cracker crust, instead I decided for pumpernickel. Not sure if you have ever heard of it, this is extremely dark and moist bread from Germany. Obviously you can replace it, but the sweet rye bread does add a very nice touch to this cheesecake.

Eiskalter Kaffee-Cheesecake ohne backenSo as stated, the bottom layer is a mix up pumpernickel, butter and coffee, which serves as the crust. The second layer is a mix of cream cheese and whipped cream with coffee flavor, the thrid layer is the same plus melted chocolate, and the top layer is whipping cream combined with chocolate, dusted with some cocoa powder.

Rainbow Color Purple: Blueberry Cheesecake with no Refined Sugar

Heidelbeer-Käsekuchen

This blueberry cheesecake is almost a no-bake cake and does not contain any refined sugar. All its wonderful color and flavor comes from blueberries. I am sure you will love it as much as we did. It consists of an easy two-ingedient cookie base and a creamy blueberry mousse. The best of all, you can make it truly vegetarian, I give tips to make it with agar agar, which is a vegetarian jelling agent. Feel free to use gelatine, if you are more familiar with it, but I actually prefer agar agar.

Heidelbeer-KäsekuchenHeidelbeer-KäsekuchenI am also posting this recipe as I am hosting the blog event “Colorful Food.” I basically invite you to create a recipe in one of the seven rainbow colors: red, orange, yellow, green, blue, purple, and pink. If you would like to learn more, please check here. Today I am presenting, you guessed it, PURPLE! I first started with red strawberry pancakes, which were followed by cute little mango mini cakes for orange, lemon soufflé inside a lemon for yellow, a very green kiwi sheet cake, a spirulina and blackberry smoothie for blue (vegan!), aaaaaand, today this blueberry cheesecake for purple. As you can see, we are still missing pink, so be sure to check back!

Guest post: German chocolate cookie sandwich (cold dog) from Nina from Törtchen- Made in Berlin

Kalter Hund mit Oreo und Himbeeren-3513

I am so excited today to share this post with you as Nina from the blog Törtchen – Made in Berlin (cupcakes made in Berlin) is sharing a very German recipe with us here. As you can see from my very long blog title, it is close to impossible to translate this treat I ate so often as a child. Literally translated the dish is called “cold dog.” Why this is the case, I haven’t been able to find out other than it is done cold, so with no baking, but what I can assure you is that this is one of my favorite things to eat. I do distinctly remember licking my fingers after getting a piece and being very excited about the high amount of chocolate after each bite. Because, you know, chocolate is always great!

No-bake Lime Cheesecake

Lime Cheesecake

We had so many limes at home. So what to do with them? Smoothies? Cocktails? I decided to go with a no-bake cheesecake. With lots of lime flavor. I am really proud because I invented this recipe. Normally I like to follow recipes. It is nice to simply follow instructions, one step at a time. It is very relaxing. At least for me baking is really relaxing. That’s why I am so proud that I invented this cake. A creamy cheesecake with a nice tangy lime flavor. Trust me, you will taste the lime.
