Lemon Posset in 15 minutes with 3 ingredients

Have you ever heard of lemon posset? Apparently this is a dessert from the UK and it contains three ingredients: lemons, heavy cream, and sugar. It is unbelievably easy to make and comes together in less than 15 minutes. Surprisingly, you don’t need any additional binder, no gelatine, no agar agar, the lemons themselves somehow work their magic for this to get to the creamy and mousse-like texture. Continue Reading…

Facturas Argentinas for World Bread Day

Facturas argentinas

It is World Bread Day again and this time I brought you some sweet pastry from Argentina, facturas argentinas! Facturas argentinas can be described as the typical sweet pastry you may have for breakfast or as a snack. All bakeries offer an abudance of different options, they are typically either filled with quince paste (dulce de membrillo), the caramel dulce de leche, or a custard cream. They come in different shapes and sizes, but what they all have in common is the same dough, rough puff pastry. Actually, it seems to be impossible to find the proper English translation. In German we say “Plunderteig”, which means it is a yeast dough, which usually has butter layers in between. The rough part in this version, however, comes from the fact that the butter is not worked into the dough as a single layer, but instead mixed into the yeast dough directly and later layered. It probably is described best as rough plunder.

Simple Cherry Cake for a Picnic

Einfacher Kirschkuchen

This simple cherry cake has a little embarassing backstory. I once baked this cake many years ago when I was going to college. I remember, it was during one of these horrible times when there were like tons of exams and I was studying like there was no tomorrow. It felt like my brain was a hardware drive and had to be fully deleted and swiped clean just to be crammed again with data and facts for the next exam. It was during this time that my roommate asked for the recipe because she enjoyed it the first time around. She had planned to make it for her family visiting. And I simply didn’t remember anymore where I got it from, my brain, my hard drive had gone blank. However, I was too ashamed to admit to not knowing, so I simply did some research and gave her a recipe I found. Unfortunately, the recipe I had passed on to her was not nearly as good. But I kept quiet, I was too embarassed. Years later when I flipped through the very old cookbook my mom had given to me from the famous German brand Dr. Oetker, I realized that actually this was the recipe I had used back then. So, Susann, if you are reading this, it had nothing to do with your baking abilities, I simply had passed on the wrong recipe to you! Sorry for that.

A Simple Fruit Heart for Mother’s Day

Einfaches Früchte-Herz aus Mürbeteig

If you want to make something delicious for your mom, but are not in the mood for a complicated layer cake, how about this simple fruit heart with pie crust? I used nectarines as filling, but feel free to go with any other fruit. Which fruit is your mom’s favorite? Unfortunately I couldn’t make this fruit heart for my mom for Mother’s Day, she lives too far away. However, today is a very special day for me, it is our ten-year anniversary. So I thought this is also the perfect occasion to make a heart. As soon as I got it out of the oven, my husband had googly eyes and asked whether he could have a piece. So I kept my photo shoot to a minimum to relieve him from his pain.

Easy Chocolate Cake with Caramelized Plums and Pecans

schneller Schokokuchen

What my go-to recipe for chocolate cake is? Definitely this one. I don’t even know when or where I picked it up. It probably was passed down to me from my mom as we spent several years in the U.S. in the 80’s, German recipes are usually a bit more complicated. It has been very popular among my relatives. I love this recipe because it can be whipped up in about five minutes. Literally.

One thing I know for sure is that I have seen this cake around a lot. At a lot of festivities. I mean, what beats a cake you can whip up so quickly and which is so versatile? I love that it is so moist! Originally it was a sheet cake, often served with nuts and frosted with some chocolate frosting. Sometimes it was made with cherries, my sister also used it as a birthday cake for one of her children and used smarties, M&Ms etc. to make it more festive. This recipe can also be the base for a bundt cake.
