Chocolate and caramel are the perfect combination, don’t you think? I at least find that they are the dream team. And for that reason I am offering something from my birth country Uruguay, namely empanadas. These can be filled with about anything and everything. I have posted the classic beef empanada recipe beforehand, but today I wanted something sweet instead. I went for dulce de leche. Never heard of it? This is basically a caramel made from sweetened condensed milk, it is eaten throughout Latin America and is probably as important as peanut butter is in the U.S. Of course you will find the recipe on this blog as well. You basically need to cover a can of sweetened condensed milk for two and a half hours. All tricks and tips can be found here.

Empanadas are perfect as a snack or as party food. You may wish to take them to any potluck or can serve it as the main course with a nice salad. Of course you don’t need to serve sweet empanadas, I already mentioned the beef empanadas on this blog. If you want to stick to the sweet version, you may also fill them with jams/preserves, fruit compote or the like. You can also make a vanilla dough instead of the chocolate one, the dough is similar to a pie crust. I may have gone a little over the top with the melted butter and sugar and cinnamon mix I decided to sprinkle these with. You can enjoy them plain as well. But I am the type of person who just likes to indulge herself…

Chocolate Empanadas with Dulce de Leche

Serves: About 9 empanadas, depending on size
Prep Time: 45min Cooking Time: 2 1/2 hrs + 20-25min Total Time: 3 hrs 45min

These chocolate empanadas with the caramel cream named dulce de leche are later brushed with butter and then sprinkled with cinnamon and sugar.

Ingredients

  • Filling
  • 1 can of 400 grams of sweetened condensed milk or bought dulce de leche

  • Chocolate Dough
  • 250 grams of all-purpose flour
  • 25 grams of unsweeetened cocoa powder
  • A pinch of salt
  • 125 grams of cold butter
  • 1 egg
  • 1-3 tablespoons of milk

  • Cinnamon and Sugar Sprinkle
  • 30 grams of butter
  • 30 grams of sugar
  • 1 teaspoon of cinnamon

Instructions

For the filling place the can in a large pot and cover completely with water. Boil for two and a half hours, occassionally adding water. Let cool before opening. For further tips, please check here.

For the dough combine the flour, cocoa powder, and salt in a large bowl. Add the cold butter in small pieces and rub into crumbs with your fingers Add the egg and work into a dough. You may have to add milk, a tablespoon at a time if it still is to dry. Wrap and chill for at least half an hour or overnight.

Line a baking sheeet with parchment paper and preheat the oven to 180 degrees Celsius.

Roll out the dough on a lightly floured surface, it should be thin. Cut out circles of 12cm either with a cookie cutter or with a smaller plate/dish. Put two to three teaspoons of the dulce de leche in the middle of each circle. Brush the edges with milk, I do this with my pinkie. Fold each circle in half so that you have a half moon and press down the edges with a fork. You can also turn the edges about half a centimeter inwards every centimeter or so to create a pattern.

Place the prepared empanadas on the baking sheet and brush with egg wash. Bake for about 20-25min.

Towards the end of the abking time, melt the remaining butter and mix the sugar and cinnamon in a small bowl. Once you take the empanadas out, immediately brush with the butter and sprinkle with the sugar mix. Empanadas can be enjoyed either still warm or cold. If eating warm, be careful not to burn yourself with hot filling!
