Are you also a huge cookie monster like me? I don’t know about you, but I feel cookies are the ultimate comfort food. Regardless of how bad your day was, if you get to eat one from the cookie jar, I am sure that life will look better afterwards. I found this recipe on the German blog from Patrick and we I saw that I placed the cookies on a clotheslines, I knew I not only wanted to bake that very same cookie, but also wanted to imitate these photos. Below recipe is a cut out oatmeal cookie with buttermilk dipped in melted chocolate.

Einfache HaferflockenkeksePatrick says that you can also add cranberries or raisins, but I just felt that the plain version would do perfectly. What I do like a lot is that the cookies can be stacked wonderfully, which is perfect if you want to ship them. I have sent them to some friend of mine and she was delighted. Simple Oatmeal Cookies with Buttermilk

Serves: About 24-30, depending on size

These simple oatmeal cookies with buttermilk are made like a shortbread, are first chilled before they are cut and then dunked in chocolate.

Ingredients

  • 225 grams of all-purpose flour
  • 225 grams of rolled oats
  • 80 grams of brown sugar
  • 165 grams of cold butter
  • 100 grams of buttermilk
  • 20 grams of honey or molasses
  • 200 grams of semi-sweet chocolate
  • 1 tablespoon of canola oil

Instructions

Mix flour, rolled oats and sugar in a large mixing bowl.

Add the cold butter in chunks and then rub into crumbs the size of peas. Add buttermilk and honey and work into a ball.

Wrap in plastic wrap and chill for about an hour or overnight.

Flour a clean surface and roll out dough into 1/2 cm of thickness. Cut out circles, 7cm in diameter, you may wish to use a glass. Repeat with the remaining dough.

Heat oven to 170 degrees Celsius and put the cut-out cookies on a baking sheet lined with parchment paper. Since the cookies have no leavening agent, you can place them close to each other. Bake for about 15min, they will still look rather pale.

Melt the chocolate with the oil on low heat and dunk half the cookie in chocolate. Let harden and enjoy.
