Do you love raspberries with chocolate? Then these raspberry chocolate cupcakes are for you. Since my raspberry chocolate cake became the runner-up in 2020 and has already more than 100 reviews, I decided to give this flavor combination another chance. What better option than to ygo for cupcakes? Cupcakes usually require less time and are wonderful for any events, parties, or even for Valentine or a birthday. My version contains my favorite chocolate cupcake, a tart raspberry filling and buttercream bursting with raspberry flavor. No artifical food coloring required.

Schoko-Himbeer-CupcakesYes, I am a huge chocoholic, I even have a full chocolate category on my blog. For that reason I knew I had to go with chocolate flavor again. It has been too long if you ask me. As the base I decided to use my favorite chocolate cupcake, but fill this one up with raspberry filling and make a raspberry buttercream. Mind you, this is a buttercream with a good ratio of fruit versus butter. I don’t like American buttercream, it is way too sweet for me, so this option uses thickened raspberries instead of sugar to create the right consistency. For good measure, I also replace some of the butter with cream cheese instead.

Alright, but let’s get going now!

Perfect Raspberry Chocolate Cupcakes

Serves: 12 cupcakes
Prep Time: 30min Cooking Time: 22min Total Time: 1hr

These perfect raspberry chocolate cupcakes combine tart raspberries perfectly with sweet chocolate.

Ingredients

  • Cupcakes
  • 2 eggs
  • 50 grams of regular sugar
  • 50 grams of brown sugar
  • 75 grams of vegetable oil
  • 2 teaspoons of vanilla extract, see here how to make your own
  • 95 grams of all-purpose flour
  • 35 grams of unsweetened cocoa
  • 3/4 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • A pinch of salt
  • 120 grams of buttermilk

  • Rasberry Filling and Buttercream
  • 300 grams of either fresh or frozen raspberries
  • 70 grams of regular sugar
  • 20 grams of cornstarch
  • 150 grams of butter at room temperature
  • 70 grams of cream cheese

  • Decoration
  • 50 grams of semi-sweet chocolate
  • 1 teaspoon of vegetable oil
  • A dozen fresh raspberries

Instructions

For the cupcakes preheat the oven to 180 degrees Celsius. Line a 12-cup muffin pan with cupcake liners.

Whisk the eggs, sugars, oil and vanilla in a large bowl together. Add flour, cocoa powder, baking powder, baking soda, and salt. Only whisk just a little. Add the buttermilk and only whisk until combined. Do not overmix. Fill cupcake liners about half. Bake for about 20-22 minutes. Toothpick should come out clean.

Meanwhile for the raspberry filling heat the raspberries with the sugar in a pot until fully hot and raspberries can be mashed. Mix cornstarch with a bit of water in a small mug until you see no lumps. Then add to the raspberries and bring to another boil while stirring constantly. Let cook for about a minute, it should thicken. Let cool.

Once the cupcakes and the raspberry filling are cool, cut out the center of each cupcake and fill with about a teaspoon of the raspberry filling. I just ate all leftovers.

For the raspberry buttercream beat the butter for a few minutes, then add the remaining raspberry filling by the tablespoon. Once everything is combined, add the cream cheese and mix until combined. Transfer to a piping bag and pipe tall swirls on each cupcake. Drizzle with a bit of melted chocolate mixed with the oil and garnish with one fresh raspberry.

    das Rezept hört sich wundervoll an und schreit: Bitte nachmachen!!
    Jetzt kommt mir die Menge von nur 95 g Mehl sehr wenig vor – ist das wirklich richtig für 12 Cupcakes? In der Zutatenliste fehlt auch noch die Angabe, wie viel Butter für die Buttercreme genommen werden muss.
    Vielen Dank, wenn du das noch ergänzen könntest. Dann mache ich mich an die Arbeit :-).

      Liebe Anne,
      die Mehlangabe ist richtig, das ist ein relativ dünnflüssiger Teig, man kann die Muffinförmchen auch nur zur Hälfte auffüllen.
      Danke für das aufmerksame Lesen, es sind 150 Gramm Butter, habe ich korrigiert.
