Darf ich vorstellen, kolumbianischer Sandkuchen namens mantecada. Hauptunterschied zu einem Sandkuchen aus deutschen Landen ist die Verwendung von Maismehl. Dadurch wird dieser Kuchen automatisch fester und kompkater. In Kolumbien wird dieser Kuchen gerne zum Fr\u00fchst\u00fcck gereicht und ist auch als Snack beliebt. Man schl\u00e4gt zun\u00e4chst gut die weiche Butter mit dem Zucker schaumig bevor nach und nach Eigelb eingearbeitet wird. Alle trockenen Zutaten werden mit dem steifgeschlagenen Eiwei\u00df am Ende vorsichtig unterhoben. Theoretisch k\u00f6nnte man ein Triebmittel komplett weglassen, das ist hier jedoch wichtig, da wir mit dem Maismehl deutlich weniger Gluten haben und so weitere Hilfe brauchen damit der Teig gut aufgeht. Wie oft bei R\u00fchrkuchen, schmeckt dieser Kuchen am Folgetage nochmal besser, wenn er hat gut durchziehen k\u00f6nnen.<\/p>\n<p><a
