Nicht das Bindemittel vergessen f\u00fcr mehr Standhaftigkeit<\/h2>\n<p>In alten Rezepten findet sich Grie\u00df, teilweise nimmt man Speisest\u00e4rke, Mehl oder aber Vanillepuddingpulver, um dem Kuchen mehr Standfestigkeit zu geben und so sp\u00e4tere Risse zu vermeiden. Sollte das Rezept kein Bindemittel enthalten, w\u00e4re mein Vorschlag ca. 50g oder ein P\u00e4ckchen Vanillepuddingpulver zur Masse hinzuzugeben, wenn man sie verr\u00fchrt.<\/p>\n<h2>4. M\u00f6glichst wenig Luft in den Teig einschlagen<\/h2>\n<p>Im Gegensatz zu <a href=\"https:\/\/jennyisbaking.com\/de\/2019\/04\/09\/twelve-tips-for-perfect-sponge-batter\/\" target=\"_blank\" rel=\"noopener\">Biskuitteig<\/a>, der davon lebt, dass man m\u00f6glichst viel Luft in den Teig einarbeitet, ist das Gegenteil der Fall bei K\u00e4sekuchen. Wenn m\u00f6glich, nur mit einem Schneebesen arbeiten und versuchen die Masse nicht schaumig zu schlagen. Denn dadurch entstehen Luftl\u00f6cher, die wiederum sp\u00e4ter zu Rissen f\u00fchren k\u00f6nnen.<\/p>\n<h2>5. Am besten in einer gut gefetteten Springform backen<\/h2>\n<p>Klingt banal, aber wenn man wie ich einmal K\u00e4sekuchen in einer Kuchenform ohne l\u00f6sbaren Rand gebacken hat, wird man diesen Fehler nie wieder begehen. Fette die Form gut ein und belege den Springformboden mit Backpapier. L\u00f6se den K\u00e4sekuchen erst aus der Springform, wenn er mindestens Raumtemperatur angenommen hat, besser ist noch am Folgetag, wenn er \u00fcber Nacht im K\u00fchlschrank k\u00fchlen konnte. Dann l\u00e4sst er sich auch deutlich besser schneiden.<\/p>\n<h2>6. Ein Wasserbad bewirkt Wunder<\/h2>\n<p>Es ist zwar nervig, wenn man alles f\u00fcr ein Wasserbad vorbereiten muss, aber glaub mir, ein Wasserbad ist der gr\u00f6\u00dfte Garant daf\u00fcr, dass dein K\u00e4sekuchen definitiv keine Risse bekommt. Woran das liegt? Weil das Wasserbad eventuelle Temperaturschwankungen am besten ausgleicht und perfekt ist, damit der Kuchen langsam hei\u00df wird und ebenso langsam abk\u00fchlt. Dadurch sinkt die Gefahr, dass er zusammensackt und Risse bildet. Wenn du also ganz sicher sein willst, backe im Wasserbad, auch wenn das Rezept das nicht verlangt.<\/p>\n<h2>7. Mit dem Form-in-Form-Trick brauchst du keine Alufolie und kannst dir sicher sein, dass nichts ausl\u00e4uft<\/h2>\n<p>Du willst nicht mit Alufolie herumhantieren oder m\u00f6chtest nachhaltiger backen? Dann ist dieser Trick perfekt, stelle deine Springform in eine gr\u00f6\u00dfere Form und diese dann erst ins Wasser, so stellst du sicher, dass kein Wasser durchsichert. Einziger Haken: die gr\u00f6\u00dfere Form sollte m\u00f6glichst keine Springform sein, sondern komplett wasserdicht. Falls du eine kleine Auflaufform hast, eine Tarteform oder \u00e4hnliches, sollte das perfekt sein. Alternativ ein gro\u00dfes flaches Gef\u00e4\u00df mit kochendem Wasser auf den Ofenboden stellen<\/h2>\n<p>Eine andere Methode ist eine ofenfeste Form auf den Ofenboden zu stellen, diese muss dann mit kochendem Wasser bef\u00fcllt werden. Einziger Nachteil ist, dass der Kuchen nicht ganz so nah mit Wasser in Ber\u00fchrung kommt, aber dies ist immer noch besser als gar kein Wasserbad. Am besten ist eine m\u00f6glichst gro\u00dfe und flache Form. Aber Vorsicht, es sollte unbedingt eine ofenfeste Form sein.<\/p>\n<h2>9. Ein K\u00e4sekuchen wird eher bei niedriger Ofentemperatur gebacken<\/h2>\n<p>Hier kommt wieder ins Spiel, dass ein K\u00e4sekuchen sich nicht stark aufbl\u00e4hen soll, um dann die Gefahr zu verringern, dass er sp\u00e4ter zusammensackt und Risse bildet. Als Richtwert w\u00fcrde ich 160 Grad Ober- und Unterhitze geben. Die einzige Ausnahme bildet der <a href=\"https:\/\/jennyisbaking.com\/de\/2023\/06\/09\/original-kasekuchen-tarta-de-queso-aus-san-sebastian\/\" target=\"_blank\" rel=\"noopener\">spanische K\u00e4sekuchen<\/a>, bekannt als &#8222;burnt cheesecake&#8220;, hier ist eine starke Br\u00e4unung der Oberfl\u00e4che gew\u00fcnscht, sodass man ihn bei h\u00f6herer Temperatur b\u00e4ckt. Je nach Gr\u00f6\u00dfe und H\u00f6he muss man meist mindestens 45min, oft sogar eine Stunde Backzeit einplanen. Das ist aufgrund der niedrigeren Backtemperatur auch verst\u00e4ndlich.<\/p>\n<h2>10. K\u00e4sekuchen sollte normalerweise keine dunkle Oberfl\u00e4che haben, sondern nur leicht goldfarbig sein<\/h2>\n<p>Wenn dein Kuchen nach ca. 3\/4 der Backzeit schon dunkel wird, am besten mit Alufolie abdecken. \u00dcbrigens hilft auch das Wasserbad, dass dein Kuchen nicht dunkel wird. B\u00e4ckt er zu lange, wird er trocken<\/h2>\n<p>Die gro\u00dfe Preisfrage ist, wann man K\u00e4sekuchen aus dem Ofen nimmt. <strong>Als Faustregel gilt, er darf in der Mitte noch leicht wabbeln, aber sollte am Rand schon fest sein<\/strong>. Wenn der Kuchen noch richtig Wellen schl\u00e4gt, wenn man an ihm ruckelt, ist er noch nicht fertig. Die Mitte sollte aber nicht schon komplett fest sein, sonst wird er trocken. Wenn du ein dir noch unbekanntes neues Rezept ausprobierst, empfehle ich ca. 10min vor der gew\u00fcnschten Backzeit den Kuchen zu \u00fcberpr\u00fcfen und dann entsprechend die Backzeit anzupassen. Zu fr\u00fch sollte man die Ofentur nicht \u00f6ffnen, aber nach 3\/4 der Backzeit kann man schon mal nachschauen. Also, richtige Wellen sind schlecht, leichtes Wabbeln ist perfekt.<\/p>\n<h2>12. Geduld beim K\u00fchlen: langsam auf Raumtemperatur bringen und dann in den K\u00fchlschrank<\/h2>\n<p>K\u00e4sekuchen braucht viel Geduld, wenn es um&#8217;s Abk\u00fchlen geht. Genauso wie er langsam erhitzt werden sollte, muss er auch langsam abk\u00fchlen. Ich lasse meinen Kuchen ca. eine halbe Stunde im ausgeschalteten Ofen stehen, dann platziere ich ihn mitsamt Wasserbad zum Abk\u00fchlen auf dem Herd und erst wenn er Raumtemperatur angenommen hat, geht es ohne Wasserbad in den K\u00fchlschrank. Dadurch kann die Masse ganz lansgam stocken und ist nicht so anf\u00e4llig f\u00fcr Risse. Fast alle K\u00e4sekuchen schmecken am Folgetag nochmal besser, wenn sie im K\u00fchlschrank haben durchziehen k\u00f6nnen. Sie sind also perfekt, wenn man sie im Voraus zubereiten m\u00f6chte.<\/p>\n<h2>Bonustipp: Im schlimmsten Fall K\u00e4sekuchen mit Topping servieren<\/h2>\n<p>Trotz aller M\u00fchen hast du es nicht geschafft und dein K\u00e4sekuchen hat Risse? Nicht schlimm, ein Topping verdeckt alle Fehler.
