Na gut, mit all dem glutenfrei, ohne Kohlenhydrate usw. ist es vielleicht nicht mehr ganz so hip, aber ich zumindest liebe Brot. Frage alle Deutschen, die im Ausland leben, was sie am meisten vermissen. Oft ist die Antwort gutes, gesundes und vorallem dunkles Brot. Mein Opa sagt, Brot hat ihn durch den Krieg gebracht. Als ich ein Jahr in Kanada verbrachte, fing ich sehr bald an selbst Brot zu backen, weil mir dieses super weiche und wei\u00dfe Brot, das es gab, nicht schmeckte. Oder besser gesagt, ich den Eindruck hatte sofort wieder Hunger zu haben. Vollkorn, mit Roggen, dunkel und schwer, das war, was ich wollte. Mittlerweile essen wir nur noch selbst gemachtes Brot, normalerweise b\u00e4ckt mein Mann einmal die Woche Brot. Aber dieses Brot durfte ich backen, weil ich Urlaub hatte, er aber nicht. Das Brot hei\u00dft Bauernbrot und ist ein ordentlich schweres Brot mit einer helleren Farbe. Ich habe versucht das Rezept auf ihrer <a href=\"http:\/\/www.daskochrezept.de\/lust-auf-genuss\">Website<\/a> zu finden, aber anscheinend gibt es dieses Rezept nicht mehr online. Sollte er sich zu hart anf\u00fchlen, lauwarmes Wasser hinzuf\u00fcgen. Ich muss normalerweise immer Wasser hinzuf\u00fcgen. Sobald man einen Teigbal erhalten hat, f\u00fcnf Minuten kneten bis man einen elastischen Teig erhalten hat. <\/p>\r\n\t\t\t\t\t<\/div>\r\n\t\t\t\t<\/div>\r\n\t\t\t\t\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<div class=\"step\">\r\n\t\t\t\t\t<span class=\"step-number\">4<\/span>\r\n\t\t\t\t\t<div class=\"step-content\">\r\n\t\t\t\t\t\t<p>Zur\u00fcck in die Sch\u00fcssel geben und f\u00fcr ca. eine Stunde gehen lassen oder bis sich das Volumen verdoppelt hat. <\/p>\r\n\t\t\t\t\t<\/div>\r\n\t\t\t\t<\/div>\r\n\t\t\t\t\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<div class=\"step\">\r\n\t\t\t\t\t<span class=\"step-number\">5<\/span>\r\n\t\t\t\t\t<div class=\"step-content\">\r\n\t\t\t\t\t\t<p>Den Teig anschlie\u00dfend kurz durchkneten und in zwei gleich gro\u00dfe Teile teilen. Ca. 100gr weiteres Weizenmehl \u00fcber die Kruste geben. <\/p>\r\n\t\t\t\t\t<\/div>\r\n\t\t\t\t<\/div>\r\n\t\t\t\t\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<div class=\"step\">\r\n\t\t\t\t\t<span class=\"step-number\">6<\/span>\r\n\t\t\t\t\t<div class=\"step-content\">\r\n\t\t\t\t\t\t<p>Mit einem Tuch bedecken und ca. eine halbe Stunde erneut gehen lassen. <\/p>\r\n\t\t\t\t\t<\/div>\r\n\t\t\t\t<\/div>\r\n\t\t\t\t\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<div class=\"step\">\r\n\t\t\t\t\t<span class=\"step-number\">7<\/span>\r\n\t\t\t\t\t<div class=\"step-content\">\r\n\t\t\t\t\t\t<p>Den Ofen auf 250 Grad vorheizen, einen Beh\u00e4lter mit ca. 500ml Wasser auf den Boden des Ofens stellen. <\/p>\r\n\t\t\t\t\t<\/div>\r\n\t\t\t\t<\/div>\r\n\t\t\t\t\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<div class=\"step\">\r\n\t\t\t\t\t<span class=\"step-number\">8<\/span>\r\n\t\t\t\t\t<div class=\"step-content\">\r\n\t\t\t\t\t\t<p>Beide Laube 15min backen, dann den Wasserbeh\u00e4lter entfernen, Temperatur auf 220 reduzieren und nochmal 30-35min backen. <\/p>\r\n\t\t\t\t\t<\/div>\r\n\t\t\t\t<\/div>\r\n\t\t\t\t\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<div class=\"step\">\r\n\t\t\t\t\t<span class=\"step-number\">9<\/span>\r\n\t\t\t\t\t<div class=\"step-content\">\r\n\t\t\t\t\t\t<p>Um festzustellen, ob die Brote fertig sind, auf den Boden des Brotes klopfen, klingt es hohl, ist das Brot fertig, ansonsten weiter backen. Dann die Ofent\u00fcr einen Spalt \u00f6ffnen und die Brote f\u00fcnf Minugen im Ofen lassen, dann herausnehmen und komplett abk\u00fchlen lassen.<\/p>\r\n\t\t\t\t\t<\/div>\r\n\t\t\t\t<\/div>\r\n\t\t\t\t\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t<\/div>\r\n\t\t\t\t\r\n\t\t\t\t\r\n\t\t\t\t<div class=\"recipe-notes\">\r\n\t\t\t\r\n\t\t\t<h3 class=\"recipe-title\">Notes<\/h3>\r\n\t\t\t\r\n\t\t\t<p>Hefe mag es warm. Behandle sie wie ein Lebewesen (ist sie auch) und achte darauf, dass sie keinen Zug abkriegt. \r\nWie lange der Teig gehen muss, h\u00e4ngt von einige Faktoren ab, es kann sein, dass es bei dir l\u00e4nger oder k\u00fcrzer dauert. \r\nHefe mag keine Umluft, sonst werden die Brote trocken.
