Man k\u00f6nnte fast meinen, dass ich kein Brot esse. Dem ist aber nicht so. Ganz und gar nicht. Nein, das liegt schlicht daran, dass mein guter Ehegatte der unangefochtene Meister der Brotb\u00e4ckerei ist. Er stammt sogar aus einer B\u00e4ckerfamilie und b\u00e4ckt Brot eindeutig besser als ich. Zumindest heute. Nat\u00fcrlich hat auch er eher kl\u00e4glich angefangen, ich erinnere mich noch lebhaft, als ich ihm erkl\u00e4rte, dass Hefe es gerne kuschelig warm mag und wie wir gemeinsam das erste Hefebrot buken. Als ITler ist es wohl nicht \u00fcberraschend, dass er sich viel zur Brotb\u00e4ckerei belas, dass er ausprobierte und wissenschaftliche Experimente durchf\u00fchrte, bis er zufrieden war. Mit zu seinem Erfolg beigetragen hat auf jeden Fall Lutz vom <a href=\"https:\/\/www.ploetzblog.de\/\" target=\"_blank\" rel=\"noopener noreferrer\">Pl\u00f6tzblog<\/a>, der ganz in Manier meines Mannes sogar die genaue Raumtemperatur angibt, bei dem der Teig zu ruhen hat. Per Hand verkneten. Eine halbe Stunde bei Raumtemperatur stehen lassen. <\/p>\r\n\t\t\t\t\t<\/div>\r\n\t\t\t\t<\/div>\r\n\t\t\t\t\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<div class=\"step\">\r\n\t\t\t\t\t<span class=\"step-number\">3<\/span>\r\n\t\t\t\t\t<div class=\"step-content\">\r\n\t\t\t\t\t\t<p>Dann Teig 1, das \u00d6l und die weitere Hefe hinzugeben und ca. 5min mit der K\u00fcchenmaschine auf niedrigster Stufe verkneten, dann nochmal 5min auf zweitniedrigster Stufe kneten. Zu einem Ball formen und in eine mit einem feuchten Tuch abgedeckte Sch\u00fcssel geben. <\/p>\r\n\t\t\t\t\t<\/div>\r\n\t\t\t\t<\/div>\r\n\t\t\t\t\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<div class=\"step\">\r\n\t\t\t\t\t<span class=\"step-number\">4<\/span>\r\n\t\t\t\t\t<div class=\"step-content\">\r\n\t\t\t\t\t\t<p>Insgesamt drei Stunden bei Raumtemperatur stehen lassen, dabei nach 30, 60, 90 und 120 min einmal kr\u00e4ftig durchkneten, um der Hefe neue Sauerstoffzufuhr zu geben, danach jeweils Teig abgedeckt als Ball geformt in der Sch\u00fcssel stehen lassen.<\/p>\r\n\t\t\t\t\t<\/div>\r\n\t\t\t\t<\/div>\r\n\t\t\t\t\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<div class=\"step\">\r\n\t\t\t\t\t<span class=\"step-number\">5<\/span>\r\n\t\t\t\t\t<div class=\"step-content\">\r\n\t\t\t\t\t\t<p>Teig noch einmal kurz durchkneten und in zwei Teile teilen. Aus jedem Teil einen Laib formen und aus einem Drittel des jeweiligen Laibes einen Fl\u00fcgel ausziehen, dabei aber nicht die Teile von einander trennen. Wer mag, kann auch mit einem Nudelholz den Fl\u00fcgel vom Brotlaib ausrollen.
