Dann will man etwas authentisch nachbacken, was man im Urlaub gekostet hat und dann scheitert es an den Zutaten. So ging es mir lange Zeit mit achiras, dem knusprigen und glutenfreien K\u00e4sesnack aus Kolumbien. Erste H\u00fcrde war der verwendete K\u00e4se, queso campesino findet man in Deutschland schlicht nicht. Vergleichbar ist h\u00f6chstens Feta. Dieser ist aber deutlich trockener und sehr gesalzen. Tja, ist wohl nicht.<\/p>\n<p>Und dann fand ich heraus, dass die Kolumbianer ein Mehl verwenden, dass es hier ganz bestimmt nicht gibt: Mehl aus Sago. Ich musste erst Wikipedia konsultieren, um zu verstehen was Sago \u00fcberhaupt ist. Ich lernte dann schnell, dass Sago aus der Sagopalme stammt und aus ihr St\u00e4rke gewonnen wird. Tja, sowas Abgefahrenes findet sich ganz bestimmt nicht in Deutschland. Ja, wie, gibt es hier also doch zu kaufen ohne dass ich davon wusste? Ich war v\u00f6llig \u00fcberrascht und kaufte einfach mal eine Packung. Zu Hause \u00f6ffnete ich sie neugierig, Sago wird hier in Deutschland nur als kleine K\u00fcgelchen verkauft wie ihr sie auf dem Foto unten seht. Hm, wie konnte ich nun daraus Mehl machen? Ich versuchte es zun\u00e4chst einfach mal mit unserer H\u00e4ckselmaschine. Aber leider klappte das dann doch nicht so gut wie ich dachte, die Achiras wurden irgendwie zu kr\u00fcmelig damit. Hm, da h\u00e4tte ich auch drauf kommen k\u00f6nnen, dass man das als Ersatz nehmen kann. Tapiokast\u00e4rke kommt auch bei den sogenannten <a href=\"https:\/\/jennyisbaking.com\/de\/2018\/12\/05\/kolumbianische-bunuelos\/\" target=\"_blank\" rel=\"noopener noreferrer\">Bu\u00f1uelos<\/a> zum Einsatz, das sind frittierte K\u00e4seb\u00e4llchen aus Kolumbien. Damit war ich dann angefixt und dachte mir, diesen queso campesino kriegt ich auch irgendwie noch zustande. Ich probierte einfach eine Mischung aus Feta und Frischk\u00e4se. Tja, und dann musste ich doch so einige Versuche starten bis ich bei den achrias landete, die mein Mann so hei\u00df und innig liebt, mal liefen sie mir auseinander, mal machte ich sie zu gro\u00df, mal waren sie zwar au\u00dfen knusprig, aber innen noch feucht. Aber was lange w\u00e4hrt, wird endlich gut. Jetzt kann ich guten Gewissens das Rezept hier vorstellen. Mit deutschen Zutaten, die man in gr\u00f6\u00dferen Superm\u00e4rkten findet. Extra Pluspunkt? Der Teig ist feucht und etwas klebrig, das ist normal. <\/p>\r\n\t\t\t\t\t<\/div>\r\n\t\t\t\t<\/div>\r\n\t\t\t\t\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<div class=\"step\">\r\n\t\t\t\t\t<span class=\"step-number\">4<\/span>\r\n\t\t\t\t\t<div class=\"step-content\">\r\n\t\t\t\t\t\t<p>Aus dem Teig drei lange und d\u00fcnne Str\u00e4nge auf einer mit Tapiokast\u00e4rke bemehlten Arbeitsfl\u00e4che rollen und jeweils ca. 1,5cm abschneiden. Diese kleinen St\u00fcckchen auf das Backblech setzen, den kompletten Teig so verarbeiten. <\/p>\r\n\t\t\t\t\t<\/div>\r\n\t\t\t\t<\/div>\r\n\t\t\t\t\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<div class=\"step\">\r\n\t\t\t\t\t<span class=\"step-number\">5<\/span>\r\n\t\t\t\t\t<div class=\"step-content\">\r\n\t\t\t\t\t\t<p>15min bei 180 Grad Celsius backen, danach weitere 15-20min bei 160 Grad backen.
