Biskuitteig ist einer meiner Lieblingsteige, ich liebe insbesondere Biskuitrollen (siehe dazu verschiedene Rezepte unten), da sie super schnell vorbereitet sind und meiner Meinung nach perfekt was f\u00fcr G\u00e4ste hermachen. Aber nat\u00fcrlich ist Biskuit auch super als klassischer Tortenboden. Wenn richtig zubereitet, ist Biskuit wunderbar leicht, luftig und locker. Man kann ihn mit den leckersten Cremen und Fr\u00fcchten f\u00fcllen. Aber leider muss man einige Dinge beachten, damit er nicht trocken wird, in sich zusammenf\u00e4llt oder nicht richtig hochgeht beim Backen. Dazu habe ich zw\u00f6lf Tipps f\u00fcr einen perfekten Biskuitteig aufgeschrieben, auf dass er bei dir hoffentlich klappt!<\/p>\n<h1><a href=\"https:\/\/www.instagram.com\/p\/CcukXGdptY5\/\" target=\"_blank\" rel=\"noopener noreferrer\">In diesem Instagram-Reel zeige ich wie ich Biskuit zubereite<\/a><\/h1>\n<h2>1. Eier m\u00fcssen Zimmertemperatur haben<\/h2>\n<p>Bei fast allen Massen und Teigen m\u00fcssen die Eier Zimmertemperatur haben, Biskuit ist definitiv einer davon. Das liegt daran, dass die Eier sich deutlich besser aufschlagen lassen und sich mit anderen Zutaten besser und insbesondere schneller vermischen. Falls du wie ich nie daran denkst die Eier fr\u00fch genug aus dem K\u00fchlschrank zu nehmen, hier ein kleiner Tipp: lege sie f\u00fcr f\u00fcnf Minuten in warmes Wasser w\u00e4hrend du dich um Punkt 2 k\u00fcmmerst. Wiege alle Zutaten ab, bevor du anf\u00e4ngst<\/h2>\n<p>Einer der wichtigsten Tipps f\u00fcr Biskuit ist, dass du, sobald Eigelb und Eiwei\u00df aufgeschlagen sind, nicht so lange warten solltest bis er in den Ofen kommt, weil sonst die ganze Luft, die du so m\u00fchsam in die Eier geschlagen hast, wieder verpufft und dein Biskuit dann im Ofen nicht sch\u00f6n hochgeht. Aus diesem Grund habe ich mir angew\u00f6hnt vorher Mehl, Zucker und Speisest\u00e4rke abzuwiegen, das Sieb hervorzusuchen und den Boden der Springform mit Backpapier zu belegen. So geht dann alles ratzfatz, wenn die Eier aufgeschlagen sind.<\/p>\n<h2>3. Eigelb und Eiwei\u00df separat aufschlagen<\/h2>\n<p>Es gibt verschiedene Arten Biskuit zuzubereiten, entweder schl\u00e4gt man Eigelb und Eiwei\u00df separat auf, oder man schl\u00e4gt das Ei als Ganzes auf. Ich selbst erziele bisher bessere Ergebnisse, wenn ich beides separat aufschlage. Denn eine Sache, die mich st\u00f6rt, wenn man das Ei als Ganzes aufschl\u00e4gt, ist, dass man es mindestens zehn bis f\u00fcnfzehn Minuten aufschlagen sollte und das ziemlich anstrengend ohne K\u00fcchenmaschine ist. Solltest du wie ich lange Zeit keine K\u00fcchenmaschine haben, bist du deutlich schneller, wenn du sie separat aufschl\u00e4gst. Tipp: fange dazu am besten mit dem Eiwei\u00df an, dann musst du das Handr\u00fchrger\u00e4t nicht extra waschen, wenn du dann das Eigelb aufschl\u00e4gst, sondern kannst einfach weitermachen.<\/p>\n<h2>4. Fettfreie Sch\u00fcssel f\u00fcr Eiwei\u00df und Eiwei\u00df nicht zu lange aufschlagen<\/h2>\n<p>Eiwei\u00df ist leider ziemlich empfindlich, was Fett angeht. Deshalb ist es auch viel wichtiger, dass du absolut kein Eigelb in deinem Eiwei\u00df hast und sowohl Sch\u00fcssel als auch R\u00fchrger\u00e4t komplett fettfrei sind, damit es sich ordentlich aufschlagen l\u00e4sst. Eine Prise Salz oder ein TL Essig oder Zitronensaft k\u00f6nnen dich aber retten, wenn sich doch ein wenig Eigelb eingeschlichen hat. Ich habe auch lange das Eiwei\u00df viel zu lange aufgeschlagen, dachte, ich m\u00fcsste Baiser kreiern, bis ich dann feststellte, dass ich das Eiwei\u00df nur so lange schlagen musste, bis ich weiche Spitzen erhielt. Das ist \u00fcbrigens ein weiterer Grund, warum du schneller bist, wenn du separat aufschl\u00e4gst. Das Eigelb aufschlagen, bis es eine deutlich hellere Farbe hat und dickfl\u00fcssiger wird<\/h2>\n<p>Eigelb aufzuschlagen dauert zum Gl\u00fcck nicht lange. Schlage es einfach so lange mit dem Zucker auf, bis es eine deutlich hellere Farbe hat und dickfl\u00fcssiger wird. Mehl und Speisest\u00e4rke sieben<\/h2>\n<p>Die Hauptzutat beim Biskuit sind die Eier, sie machen den Biskuit so luftig und leicht. Das Mehl und die Speisest\u00e4rke m\u00fcssen deshalb so schonend wie m\u00f6glich mit den Eiern vermischt werden. Deshalb sollte man beides unbedingt vorher sieben, damit sie sich m\u00f6glichst fein mit den Eiern vermischen und keine Klumpen bilden. Unterhebe das Mehlgemisch mit einem Teigschaber, r\u00fchre den Teig nicht<\/h2>\n<p>Einer der Hauptgr\u00fcnde, warum Biskuit nichts wird, ist, weil man den Teig zu lange ger\u00fchrt hat und somit die ganze Luft aus dem Ei wieder entweicht. Am besten ist es das Mehl und die Speisest\u00e4rke mit einem Teigschaber oder einem Holzl\u00f6ffel zu unterheben, auch mit einem Schneebesen kann man es machen, f\u00fcr mich funktioniert der Teigschaber am besten, weil ich dann auch ganz tief unten in der Sch\u00fcssel schauen kann, ob sich irgendwo noch Mehl versteckt hat. Die Zutaten sollten sich miteinander vermischt haben, keine Mehlklumpen mehr anzutreffen sein und dann sollte der Biskuit unbedingt sofort ab in den Backofen. Bikuit nicht zu lange backen, sonst wird er trocken<\/h2>\n<p>Um festzustellen, ob Biskuit fertig ist, einfach mit dem Zeigefinger leicht auf den Teig dr\u00fccken, springt oder federt der Teig zur\u00fcck in seine Ursprungsform, ist er fertig. Aber Achtung, wenn du Tortenb\u00f6den b\u00e4ckst, solltest du die Ofent\u00fcr nicht vor 15min \u00f6ffnen, sonst f\u00e4llt dir dein Biskuit ein, so einen Luftzug mag er gar nicht, wenn er noch nicht fast fertig ist. Biskuitrollen w\u00fcrde ich immer nur nach Sicht backen und herausnehmen, wenn sie goldbraun ist.<\/p>\n<h2>9. Sofort aus der ungefetteten Springform l\u00f6sen, Biskuitrolle unbedingt sofort auf feuchtem Tuch aufrollen und ausk\u00fchlen lassen<\/h2>\n<p>Erinnerst du dich, dass Eiwei\u00df kein Fett mag? Deshalb sollte man auch die Springform nicht einfetten, sondern nur mit Backpapier belegen. Aber das hei\u00dft auch, dass man den Teig sofort versuchen sollte aus der Springform zu l\u00f6sen, wenn der Biskuit aus dem Ofen kommt, denn sonst wird es schwierig und er bleibt kleben. Dies gilt auch bei Biskuitrollen, st\u00fcrze den Biskuit auf einem feuchten Tuch und rolle die Rolle auf und lasse sie so ausk\u00fchlen. Machst du das erst, wenn der Biskuit abgek\u00fchlt ist, wirst du ziemlich garantiert Br\u00fcche im Teig haben. F\u00fcr <a href=\"https:\/\/jennyisbaking.com\/de\/2026\/03\/13\/japanese-fruit-roll-and-many-tips-and-tricks-for-a-roll\/\" target=\"_blank\" rel=\"noopener\">weitere Tipps, um eine Biskuitrolle zuzubereiten<\/a>, bitte einmal hier lang.<\/p>\n<h2>10. Biskuitb\u00f6den erst kalt schneiden<\/h2>\n<p>Wie oft war ich zu ungeduldig und habe versucht hei\u00dfen Biskuitteig zu schneiden, eine ganz schlechte Idee. Wenn du eine Torte mit Biskuitboden machst, musst du dich leider so lange gedulden bis die B\u00f6den abgek\u00fchlt sind, dann lassen sie sich deutlich leichter schneiden. Besonders gut geht das am Folgetag, dann kr\u00fcmeln sie auch nicht so stark.<\/p>\n<h2>11. Biskuitb\u00f6den am besten in Frischhaltefolie eingeschlagen bei Raumtemperatur stehen lassen<\/h2>\n<p>Du m\u00f6chtest erst am Folgetag die Torte zusammensetzen und hast schon mal die Tortenb\u00f6den gebacken? Dann schlage die Biskuitb\u00f6den in Frischhaltefolie ein und lasse sie am besten bei Raumtemperatur stehen, da sie leider sonst schnell austrocknen. Sollte man vorher schon wissen, dass die Torte erst in ein, zwei Tagen gegessen wird, rate ich auch die Tortenb\u00f6den mit einer 1:1 Zuckertinktur (einfach Wasser im Verh\u00e4ltnis zu Zucker 1:1 aufkochen) zu bepinseln, wenn man sie mit Creme einstreicht. Keine Sorge, der Biskuit wird nicht matschig dadurch, im Gegenteil, die Tinktur hilft, dass die Torte wunderbar frisch schmeckt, auch wenn sie ein paar Tage alt ist.<\/p>\n<h2>12. Biskuit l\u00e4sst sich einfrieren<\/h2>\n<p>Viele wissen es nicht, aber Biskuit l\u00e4sst sich tats\u00e4chlich einfrieren. Allerdings nur einmal und au\u00dferdem auch eher kurz (ein paar Wochen, ansonsten merkt man irgendwann einen Unterschied). Ich schlage dazu jeden Boden einzeln mehrmals in Frischhaltefolie ein und wickle sie anschlie\u00dfend in ein Bienenwachstuch. Wenn ich die B\u00f6den auftauen m\u00f6chte, befreie ich sie von allem und lasse sie ca. eine Stunde auf einem Teller antauen. Wer den Biskuit noch schneiden m\u00f6chte, sollte das machen, wenn der Boden noch nicht ganz aufgetaut ist, das geht besser. Wichtig ist auch, dass man die B\u00f6den mit Saft oder L\u00e4uterzucker bepinselt, damit sie saftig sind. Die unten abgebildete Hochzeitstorte habe ich mit vorher eingefrorenen B\u00f6den gemacht.
