Grund genug mal endlich wieder ordentlichen Kaiserschmarren zu produzieren. Deshalb gibt es passend zum Osterbrunch ganz lecker fluffigen Kaiserschmarren mit Rhabarberkompott. Ich habe meinen ohne Rosinen gemacht, da scheiden sich ja die Geister, aber ich mag ihn lieber pur. Dazu gibt es aber ganz famosen Rhabarerkompott, der so wunderbar einfach zu machen ist und wunderbar zum s\u00fc\u00dfen Schmarren harmoniert. Am Ende bin ich bei einer ziemlich einfachen Variante geblieben. Eigelb mit Mehl und restlichen Zutaten ordentlich verr\u00fchren, Eiwei\u00df separat aufschlagen und dann in die Pfanne. Es gibt am Ende zwei Punkte, die wesentlich zum Erfolg des Schmarrens f\u00fchren: einmal sollte man das Eigelb mit dem Mehl ein wenig quellen lassen, damit das Gluten schon arbeiten konnte. Und dann sollte man neben der Milch auf jeden Fall noch einen Anteil Wasser, am besten Mineralwasser verwenden, damit der Schmarren so richtig ordentlich fluffig wird. Aber ansonsten? Dann Vanilleextrakt, Milch, Wasser und Mehl hinzuf\u00fcgen, nochmal verr\u00fchren und dann am besten 15min stehen lassen. <\/p>\r\n\t\t\t\t\t<\/div>\r\n\t\t\t\t<\/div>\r\n\t\t\t\t\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<div class=\"step\">\r\n\t\t\t\t\t<span class=\"step-number\">3<\/span>\r\n\t\t\t\t\t<div class=\"step-content\">\r\n\t\t\t\t\t\t<p>Derweil eine gro\u00dfe gu\u00dfeiserne Pfanne hervorsuchen und etwas Butter auf niedriger Stufe darin zerlassen. <\/p>\r\n\t\t\t\t\t<\/div>\r\n\t\t\t\t<\/div>\r\n\t\t\t\t\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<div class=\"step\">\r\n\t\t\t\t\t<span class=\"step-number\">4<\/span>\r\n\t\t\t\t\t<div class=\"step-content\">\r\n\t\t\t\t\t\t<p>Die R\u00fchrst\u00e4be gr\u00fcndlich reinigen und dann das Eiwei\u00df zu steifem Schnee schlagen. Mit einem Teigschaber das Eiwei\u00df vorsichtig unter die Eigelbmasse heben und alles in die vorbereitete Pfanne geben. Die Pfanne sollte maxmimal mittlere Hitze haben. Einige Minuten von unten goldbraun braten, dabei zwischendurch schauen, dass man den Schmarrn nicht zu dunkel werden l\u00e4sst. Dann den \"Pfannkuchen\" vierteln und jedes Viertel einzeln umdrehen. Wieder br\u00e4unen lassen und dann in St\u00fccke rei\u00dfen. Sobald alles golden geworden ist, Zucker dr\u00fcber streuen und Zucker kurz karamellisieren lassen.
