Noch nie geh\u00f6rt? Das ist spanisch und kann wortw\u00f6rtlich als das &#8222;S\u00fc\u00dfe der Milch&#8220; \u00fcbersetzt werden. Dulce de leche ist eine streichf\u00e4hige Creme aus ges\u00fc\u00dfter Milch, deshalb auch der Name, und kommt geschmacklich traditionellem Karamell sehr nahe. Dulce de leche ist wahrscheinlich der g\u00e4ngigste, sowohl in Spanien, Uruguay, Argentinien als auch Bolvien und Mittelamerika wird er benutzt, auch auf portugiesisch hei\u00dft es doce de leite, ist also analog \u00fcbersetzt und wird entsprechend in Brasilien und Portugal verwendet. Venezuela und Kolumbien bezeichnen es als arequipe und manjar ist die Bezeichnung in Ecuador und Peru. Leider findet man immer noch nicht oft dulce de leche in deutschen Superm\u00e4rkten. Die traditionellste Art, die ich kenne, ist Milch mit Natron und Zucker so lange k\u00f6cheln zu lassen, bis der Zucker komplett karamellisiert ist und alles komplett eingedickt ist, sodass eine Creme entsteht. In einem uruguayischen Kochbuch wird nicht mal eine Zeitangabe gemacht, aber es dauert unbedingt mehrere Stunden.
