Pandebonos sind, wie viele lateinamerikanische Rezepte, glutenfrei, da sie mit Tapiokast\u00e4rke gemacht werden. Das ist insbesondere deshalb so tragisch, weil er Kolumbianer ist. Aber immerhin hat das einen Grund. Mein Mann hat n\u00e4mlich schon oft selbst pandebonos gemacht, leider nicht mit sonderlichem Erfolg. Jedes Mal, wenn er wieder ein kl\u00e4gliches Br\u00f6tchen, das meist zerlaufen war, aus dem Ofen holte, f\u00fchlte ich mich darin best\u00e4tigt, dass es anscheinend ein Ding der Unm\u00f6glichkeit ist ordentliche pandebonos zu machen. Bis ich endlich selbst Hand anlegte und zu meiner \u00dcberraschung mit Anf\u00e4ngergl\u00fcck gesegnet wurde. Aber dann, als ich Versuch Nr. 2 startete, erging es mir wie meinem Mann, sie zerliefen, sie wurden flach, sie breiteten sich aus, es war der Horror. Ich musste ziemlich viele Versuche starten bis sie endlich wieder wurden. Erinnert hat es mich ganz stark an einen anderen kolumbianischen K\u00e4sesnack aus Kolumbien namens <a href=\"https:\/\/jennyisbaking.com\/de\/2019\/04\/26\/achiras-crispy-cheese-snack-from-colombia\/\" target=\"_blank\" rel=\"noopener noreferrer\">achiras<\/a>, bei denen ich auch ewig lang herumprobieren musste, bis sie wurden. Lag es vielleicht daran, dass Kolumbianer meist nur ungef\u00e4hre Mengenangaben machen und viele der Lieblingsrezepte meines Mannes auf 2.500 Meter H\u00f6he gebacken werden, da sie aus der Hauptstadt Bogot\u00e1 stammen? Das klingt jetzt so simpel, aber bis ich das herausfand&#8230; Das Geheimis ist, dass der Teig zwar so feucht sein muss, dass man ihn in kleine B\u00e4llchen rollen kann, aber gleichzeitig nicht so feucht, dass einem die Br\u00f6tchen gleich zerlaufen. Weil es bei mir ziemlich lange gedauert hat bis ich die richtige Konsistenz gefunden habe, gibt es unten extra ein Bild. Damit dir nicht das gleiche passiert. Mich erinnert die Herangehensweise an meine Oma, die hat auch so gut wie nie was abgemessen, da wurde einfach geschmeckt und gef\u00fchlt, so ganz nach Augenma\u00df gekocht und gebacken und erstaunlicherweise hat es immer hervorragend geschmeckt.
