I hope you had a good start into 2026! Since this plum cake in a springform is so popular among my readers, I thought I might as well make one with apples. Just like at granny’s, with yeast dough, apple chungs and a thick layer of crumbs. The crumbs contain sliced almonds and gets the extra crunch, cinnamon makes it feel cozy and warm. I don’t know about you, but I really enjoy turning on the oven in winter. It feels so cozy when it is cold outside, maybe there is even snow and you can smell yeast dough being baked. This was also what happened, when I decided to make this cake. It was minus 8 (Celsius) on that day. You may see it on the pictures I took on the balcony, I only managed to stay outside for five minutes and then decided to come in, it simply was too cold. But once inside, ah, enjoying a slice with some hot beverage…
Yes, yeast dough requires you to be patient. But you can peel and slice the apples meanwhile and prepare the crumbs. If you do it like this, it won’t take that long placing the cake in the oven. It really does remind me of my grandma, she always seemed to be making yeast dough on the weekend. I also have an apricot sheet cake with yeast dough on the blog, which she liked to make. Maybe this will also remind you of your own grandma when you make it.
This apple cake is made with a yeast dough and cinnamon crumbs. I made a smaller version in a springform instead of a sheetcake. In this short video you can see how I make it. For the dough slightly heat the milk, you should be able to stick your finger inside. Dissolve the yeast in it. Meanwhile weigh all remaining ingredients except for the butter into a large kneading bowl. Add the milk mix and knead on low for five minutes. Then add the butter in small chunks and knead on second low for 3 minutes. The dough will be very sticky, if extremely sticky, add a bit more flour. Cover with a damp towel and let rise until double in size. Depending on the environment, this may take between 30-90min. Meanwhile wash, peel and cut apples into chunks, set aside. For the crumbs mix all ingredients except for the almonds and rub into crumbs, briefly mix in the almonds. Chill until further use. Once the dough is ready, box out the air and then press into the bottom of an oiled springform of about 24-26cm in diameter. I did this by hand. Arrange the cut apples evenly on top and sprinkle with the crumbs. Cover again with a damp towel and let rise for 20 minutes. Meanwhile preheat the oven to 180 degrees Celsius and bake on medium rack for about 30-40 minutes. Mine needed 40 minutes. Serve on the day made. You can also freeze, wait until it has cooled, wrap airtight and then freeze. Let come back to room temperature and enjoy.Apple Cake with Yeast Dough
