Guys, these are the most delicious carrot cupcakes with cream cheese frosting! I know, I know, yet another carrot cupcake recipe? Yes, indeed. First of all, carrot cupcakes are not as common in Germany as in the U.S., so I thought I could give it a go. In case you didn’t know, this blog is bilingual and I also post each recipe also in German, just click on the flag to switch languages. And I did try a lot of recipes before I was happy. I should have known that my favorite American blogger Sally would have the best recipe, super moist, with a creamy frosting and just perfect. Mind you, of course I had to reduce the amount of sugar by a lot, American recipes are way too sweet and I had to tweak it a bit, but boy, are these good!
Is it already spring in your region? I currently live in Munich, in the south of Germany and just a few days ago we had heavy snowfall. Today the sun is shining brightly but it is brisk and cold outside. I feel that the snowdrops and crocus are all confused as to whether spring is actually around the corner or not. But be it as it may, I decided to introduce some refreshing lime bars, which are definitely going to bring spring to your plate. I love the fact that they are super easy to prepare, you don’t need a lot of ingredients and that you can serve them for Easter, brunch or anything that needs to be brigthened by some fresh yellow color. Also, these will intensify in flavor on day 2 or 3, so perfect if you want to make them in advance.
I decided I needed a super simple and quick recipe. There have been too many complicated ones recently. We simply don’t have time to be in the kitchen for so long, especially if it is supposedly made from scratch. How about these delicious lime bars? You can also make them with lemon or any other citric fruit. I love them with lime. The shortcrust is not prepared the regular way with cold butter, but don’t despair, melting the butter is actually what makes this so easy to prepare. And the lime curd is also done in a jiffy, you basically whisk together all ingredients and that’s it. Let the oven do the hard work.
I want spring! How about you? Can I interested you in a bluberry lemon cupcake with lemon frosting? I can assure you, with this cupcake you will invite the colors and scent of spring onto your plate. These lemon cupcakes are moist, tart, and have blueberries as an extra bonus. You can omit the blueberries, but I just love the combination of lemon with blueberries. The frosting is prepared with cream cheese and flavored with lemon zest and lemon juice. This cupcake is perfect for any occasion, be it for a birthday, coffee invte, or for Sunday guests. They can be prepared beforehand, but also don’t take that much time to prepare fresh.
It is a shame that I haven’t posted that many bundt cakes on my blog yet. Seriously, I love bundt cakes, they are so German! And when we moved inside of Germany and I was holding my bundt cake form, I thought, well, it is about time to finally make another bundt cake again! So I decided to go with a fruity one, I love raspberries, so this time I wanted to make a delicious bundt cake with raspberry filling. It is made with yeast dough, filled with raspberries and then rolled up in the bundt cake. The yeast basically does most of the work, so don’t worry, you will have this cake ready in no time!
Many people are intimidated by yeast, but you really don’t have to be. Think of yeast as a living thing, which is actually is. I like to compare yeast to a woman in winter, yeast always likes it cozy and warm, not necessarily hot, but nice and warm. As long as you take care of that and your yeast is active, I promise, it is not that hard to deal with, give it a go!
Once you have the dough prepared, you will roll it out into a rectangle and smear the raspberry filling on top. Think of it as a cinnamon roll, because you do exactly the same, you smear the raspberries on, roll it up, but then you will place this roll into the bundt cake form. I find it so exciting cutting into the rather plain looking cake.
In exactly one week, on February 15th my blog will turn two. For this reason I decided to prepare a delicious chocolate strawberry cake. It is a very festive cake, so I think it would fit also on Valentine’s Day or later Mother’s Day.
When I started blogging about two years ago, my first blog post was French lemon tarts. I started blogging to be sure to have all the recipes I liked in one place. You know, not frantically looking for a little piece of paper, checking whether I had received a recipe on a napkin and the like. I also liked the fact that I could simply forward a link to my friends and family if they requested for me to pass on a recipe. So much easier than having to write it down in some form. Yes, I do bake with my blog, I usually have my cell phone close by.
I can’t believe that 2018 is almost over, so many things happened! I distinctly remember my bike accident I had in April. It included hemorrhage, hospitalization and a long road to recovery. I am extremely grateful that I have fully recovered and don’t have any permanent damage. For this really is a miracle. For that reason we had to celebrate here on the blog, we made a gigantic cookie with a cookie monster on top, you will find the recipe here. Or the fact that we are actually moving back to Munich from Hamburg. I am not from Munich originally, but happened to live there for three years some time ago. I am excited to be moving back and see what 2019 will have in store.
Today I am introducing a delicious orange cranberry bundt cake. I just love that this bundt cake is so moist, contains real fruit and is just perfect for winter. The batter is fairly easy to prepare and I am sure that you can serve this cake either for Christmas or any kind of get together you have planned in your future. Heck, you may even try it for breakfast!
Since Christmas is just around the corner, I decided to spice this cake with some traditional Christmas spices, such as cinnamon, cloves, nutmeg and the like. I am sure the cake will also taste without, but seriously, I put quite a bit of effort into making this cake look pretty. I mean, for me the taste of a cake will always overrule its prettiness. Seriously. I don’t understand how people find cakes made with ultra-sweet fondant georgeous. Sure, they may be from the outside, but it really saddens me that you cannot eat fondant. So what’s the deal? Why do people say these cakes are gorgeous if you can’t eat half of them? In this instance I decorated my bundt cake with some oranges, cranberries, and rosemary to make it extra special. So I figured it wouldn’t hurt to also make the batter have some secret ingredient. Hence the spice plus fresh cranberries and orange juice. I can assure you, this cake definitely tastes as good as it looks!

The chocolate layer cake doesn’t need much time, you will also be astonished to see how quickly the frosting comes together. The only part that requires some time are the pears. Because you have to poach them and you will need to dry them in the oven to get this gorgeous decoration. But hey, it is Christmas, I feel it is worth the extra time, don’t you think?
Today I brought you some wonderful gingerbread cupcakes with cranberry filling. They are so easy to prepare, really! Basically you cream the butter with the sugar, add the egg, and then all other ingredients and that’s about it. Really simple, I promise.
There is a reason why I called these cupcakes gingerbread cupcakes. I made the cupcakes with molasses and added a lot of gingerbread spices. I mean, you do want them to actually taste like Christmas, right? I also decided to fill them with cranberry jam, which we are going to prepare in a few minutes, it is really simple. And the frosting secretly hides some gingerbread spices in the chocolate. I hope you are as excited about these cupcakes as I am!

Guys, I don’t know if I will ever be able to eat regular tiramisu, seriously tiramisu sponge roll is the best! I have to admit, I have not been a big fan of ladyfingers. At least the store-bought ones. They are so dry! For tiramisu to taste great, you have to wait for the ladyfingers to moisten properly. And I am too lazy to actually make the ladyfingers myself.
But then I finally knew it. You need to know that I am a big fan of sponge rolls. For that reason you will find a share of sponge rolls on my blog. Try this pumpkin roll with apple cream, this roll with blueberries or this strawberry roll. Sponge cake is so light and fluffy, I really love its texture. And one day while I was checking out Pinterest, it suddenly hit me. Of course this is the solution! Why not make tiramisu in a roll instead? Why not omit the dry ladyfingers and instead replace them with my favorite sponge cake? Yes, I had to try this out immediately.
