Colombian Buñuelos with German Ingredients

Yay, today I get to introduce Colombian buñuelos with German ingredients. I already have a buñuelos recipe on the blog. However, for the previous recipe we had to make the cheese ourselves. But now I managed to make a recipe with cheeses that are readily available in Germany. So let me introduce to you these cheese fritters. They are traditionally served in December, for sure for Christmas, but also for New Year’s. If you would like to learn more about Colombian Christmas traditions and recipes, check out that blog post. Just as I managed to make Colombian pandebonos with this farmer’s cheese, I replaced the Colombian queso costeño with it. I also like to use a mix and throw in feta cheese. As cheeses have a different amount of liquid, I had to tweak the recipe a bit, but then it was perfect!

Gougère cheeseballs from Switzerland

Gougère Schweizer Käsebällchen

Today you will get Gougère from Switzerland! Gougères are cheese balls made from choux pastry. They are super light and airy. If you like eclairs and profiteroles, these are for you, a savory snack made from exactly the same  dough, choux pastry is first boiled before eggs are added. If you are interested in sweet choux pastry, how about profiteroles with raspberry filling, black forest eclairs, eclairs with coffee cream or peanut butter filling. Below cheese balls are a wonderful fingerfood, snack, or can be served for any gathering.

Sweet Plantains with Quince Paste and Cheese

It is about high time that I finally introduce a recipe with plantain on my blog. Plantains are soooo versatile, they are often used as a side if green and are treated like potatoes. Once they are ripe and yellow, they are often used in desserts or as a sweeter component. Today I am going to show them as a sweet dessert with quince paste and melted cheese or in Spanish “platanos con queso y bocadillo.” It is a super simple dessert, which is etremely popular in Colombia. Normally you would use guava paste, however, as this is close to impossible to get in Germany, we will use quince paste instead. My Colombian friends revealed to me that it is close enough to revoke the sweetest memories.

Achiras, crispy cheese snack from Colombia

Achiras, knuspriger Käsesnack aus Kolumbien (glutenfrei)

Have you every experienced this? You want to bake something you ate during your holiday, but then you can’t find the right ingredients. This is what happened to me when I tried to make achiras, this is a gluten free cheese snack from Colombia. My first problem was the cheese being used, it is called queso campesino and simply is not sold in Germany. Feta is probably the closest you will ever find, but it is firmer and much saltier. So I thought I couldn’t make achiras.

On top of that, Colombians use a special starch for achiras. It is extracted from the Sago palm. I was very certain that regular grocery stores in Germany wouldn’t offer Sago starch. At least this is what I thought.
