Berry pie, today it is triple berry day. How to make a pie crust I explain in this blog post. This pie is filled with at least three types of berries. I had a lot of blueberries, some raspberries, and blackberries. You may also use strawberries, or, if you want to go crazy, even cherries. This pie is another summer pie, feel free to check out my cherry pie, peach pie, strawberry pie, or these blueberry hand pies. The trick for a proper set filling is here that you cook half of the berries first with some cornstarch and then add the fresh berries for additional texture. This is so delicious, I promise.
I have said this before, but I don’t mind repeating it yet again, I am a huge fan of breakfast that can be prepared the night before. These overnight sourdough pancakes definitely fit the bill. I decided to serve them with a delicious blueberry sauce. If you are anything like me, it hurts each time you have to discard some of your sourdough starter. I personally find it so delightful to actually use these discards and make some deliciousness out of it. For this recipe we will need 200 grams of sourdough starter, so nothing is going to be wasted. I want spring! How about you? Can I interested you in a bluberry lemon cupcake with lemon frosting? I can assure you, with this cupcake you will invite the colors and scent of spring onto your plate. These lemon cupcakes are moist, tart, and have blueberries as an extra bonus. You can omit the blueberries, but I just love the combination of lemon with blueberries. The frosting is prepared with cream cheese and flavored with lemon zest and lemon juice. This cupcake is perfect for any occasion, be it for a birthday, coffee invte, or for Sunday guests. They can be prepared beforehand, but also don’t take that much time to prepare fresh.
I believe it is time to say goodbye to summer. At least here in the north of Germany you can tell, the nights are getting chilly and the days are definitely getting shorter. For that reason I decided to celebrate the change of season with a chocolate layer cake with lots of berries. Mind you, the strawberries are not imported, but actually from Germany. But regardless of what type of berries you have at hand, I am sure you will love this cake. Just make sure you find some tart berries and you will be good to go. The sweetness of the chocolate combines nicely with the brries, believe me.
Guys, this blueberry sponge roll is my new summer favorite. Really. Hamburg has decided to participate in summer this year. Whereas last year summer was on a Tuesday, we have had very nice and sunny weather since May, that’s already three months and it doesn’t look like it is going to change soon. So finally I also got into the “It’s too hot, I don’t want to turn on the oven” mode. I decided I needed something light and fluffy. With fruits preferably. Simple, yet elegant.
And decided to stick to something I love and which has served me well in the past: sponge roll. Sponge roll with an ultra creamy, yet refreshing filling. So I decided blueberries would serve me well. Yeah, I know, there are so many blueberry muffin recipes out there. I know. But this is my favorite and it is so simple. Please bear with me and make a dozen, or two. Because they are full of this blueberry goodness, and they just make you happy. I promise.
Happy to present lavender cupcakes today. It has been way too long that I presented cupcakes. During these one and a half years I have only shown you guys three recipes, that’s crazy, three only! And since lavender has been on my bucket list forever, I decided to give it a shot this time. Lavender either in a cake or in a cupcake, that was my idea. So I used a basic vanilla cupcake recipe and added some lavender to it. Replaced some of the sugar with honey and added blueberries to the buttercream. May I present to you a summer symphony of lavender, honey, vanilla, and blueberries?
I promised that during my second year of blogging I would introduce more cookies to my readers. So here goes: Blueberry Muffin Cookies for the official first day of spring! This cookie is a mix between a muffin top and a cookie. I love the fact that it has fresh fruit in it, cookies + fresh fruit and you have me interested. This is literally like eating the top of a muffin, so good!
It was so much fun making these Blueberry Hand Pies. In fact, I was wondering why I didn’t make them before. While sipping my cappuccino my beloved husband made for me and eating a hand pie as a second breakfast, I really thought something was wrong with me. They are perfect to take along as they fit into any plastic box (no hassle dragging them along), they can be prepared in advance, and they are so small that many can share. On top, they simply are cute to look at and they can be frozen easily.
I have to confess something, so far I have never worked with gelatine or a vegetable gelling agent. I know, it is crazy. Somehow I thought it was super complicated and I also felt that often the taste was weird or cakes looked unattractive. But I decided enough was enough and simply said, OK, let’s give it a try. I decided to try with this wonderful cake. I mean, wouldn’t you want to try a bite of this beauty?
