Refreshing Mojito Cupcakes

Guys, finally I can introduce some cupcakes to you that taste even better on day 2 or even 3. Once the cupcakes had the chance to fully develop their flavor, you will taste the lime much more, the rum is going to still be present, but more so in the back. If you are waiting for spring to finally come, how about making these mojito cupcakes? I often find March to be a though month, I am tired of the snow, I want to have more green, some refreshing ingredients, I am longing for more ease, for the birds to chirp and simply for spring. Guys, we need to celebrate! We need to celebrate as we managed to move within the city of Munich, we need to celebrate as it has been three years since my horrible bike accident and I don’t have any permanent damage. We all need to celebrate as during COVID19 we need to hold on to special moments and celebrate life. In this monochromatic time when working from home means that every day looks exactly the same, we need to put time aside to enjoy the moment. For that reason I brought a fruity and moist Piña Colada cake to the party. It contains some coconut sponges, which are filled with pineapple filliing and is then frosted with a coconut yoghurt cream. Of course it is also soaked in some rum. In my opinion this is the perfect cake if you wish to celebrate.

Mojito Slush for a late Summer Evening

I am a huge fan of Mojitos! I know, I guess I am kind of boring, but I just love the taste of mint in a cocktail, it is perfect for a lazy summer evening. For that reason I decided to present another cocktail here. I already introduced you to the Strawberry Mojito a while ago, but today it is time for Mojito Slush. Normally a slush is prepared with crushed ice, but I was simply too lazy and went for the regular ice cubes. Because, you know, why not?
