German Nut Triangles (According to my Granny)

These are German nut triangles (Nussecken) according to my granny’s recipe. I have to admit, I was quite surprised to find this recipe in her handwritten bookelt, which is had for many years. For some reason I didn’t expect her to have a classic in there. But I was super excited to give this recipe a try. Think a shortbread base, a thin layer of apricot jam, ground hazelnuts mixed with melted butter and sugar and the entire thing dipped in melted chocolate. I don’t know about you, but for me this is heaven.

This time her recipe actually contained measurements and instructions. This is very rare. It was a bit funny how you need to read the recipe, you have to go 360 degrees all around. Apparently she was determined not to use any other page in the booklet. But be it as it may, as always, her recipe was double the amount. I am alreadyy used to that, so I simply halved the recipe. With half I got 24 triangles, which I find plentiful. But feel free to make more.

German Nut Triangles According to My Granny

Serves: About 24 nut triangles
Prep Time: 45min – Cooking Time: 25min – Total Time: 1hr 10min

German nut triangles (Nussecken) consists of one layer of shortbread, a thin layer of apricot jam, and one layer of nuts mixed with butter and sugar. Two corners are usually dipped in chocolate.

Ingredients

  • Dough
  • 125 grams of butter at room temperature
  • 100 grams of regular sugar
  • 1 teaspoon of vanilla extract
  • 1 egg
  • 250 grams of all purpose flour
  • 1 teaspoon of baking powder

  • Filling
  • 150 grams of butter
  • 130 grams of regular sugar
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of milk
  • 400 grams of ground hazelnuts (you can also used almonds, walnuts, etc.)
  • 200 grams of apricot jam
  • 200 grams of semi-sweet chocolate

Instructions

1

For the dough first line a half baking sheet (mine is 24x35cm) with parchment paper. Preheat oven to 180 degrees Celsius. Beat the soft butter until creamy, add the sugar, then beat again until light and fluffy. Mix in vanilla extract and egg. Lastly add flour and baking powder. You should get a crumbly dough similar to crumbs/streusel. Press them down with your hands into the prepared sheet evenly until further use.

2

For the filling melt the butter with the sugar, mix in vanilla extract and milk. Lastly add in the nuts. It will be a very sticky and heavy dough. Take your chilled baking sheet and first spread the apricot jam on the dough. Then press down the nut mix evenly as well. Bake on medium rack for about 25-27 minutes or until lightly golden. Let cool for about 5 minutes.

3

While warm (it is easier this way) cut first into squares and then triangles. I cut the long side three times and the short side twice, leaving me with 12 squares, which I then cut diagonally, thus I had 24 triangles at the end. But you can make them smaller or bigger to your liking.

Once cooled, dunk two corners of the triangle into melted chocolate. Let cool completely. Best kept airtight. They also freeze beautifully.
