I have to admit, I am not that much into vegan cakes, but with this vegan chocolate raspberry cake I may be converted. I honestly can’t say whether I prefer this one to the non-vegan version. It all starts with a moist chocolate layer cake. I love the fact that you basically have to throw the ingredients together, whisk them and that’s about it. The raspberry filling is also the perfect companion for the chocolate. And don’t get me started on the frosting. It only contains two ingredients: chocolate and coconut cream, yum! And don’t worry, the coconut flavor is very subtle, I don’t really like coconut and I had a hard time tasting it, so I am sure you will be fine.
Did anyone say you can’t bake cookies in summer? Ha, I would like to disagree with that statement, these raspberry chocolate cookies are prefect for summer. Raspberries, seriously, fresh raspberries scream summer all over. So here you go. I love raspberries with chocolate, in my opinion one of the best flavor combinations. If you don’t want to bake this, go ahead and look for something else, but I am in love with these chocolate raspberry cookies!
Update 2019: New photos and improved recipes
Happy Easter everybody! I feel it is time for a decadent strawberry chocolate cake, don’t you think? And this one is so good. It has a chocolate cake as base, with a generous cream cheese and whipping cream filling with chunks of chocolate mixed in, lots of fresh strawberries and some more cocoa thrown in, just for good measure. If you are into chocolate (who isn’t?) and if you like fresh strawberries the same way I do, this one is for you. I already published the recipe two years ago and have baked it several times since then. After some additional tweaks I felt I had to republish the recipe since it always, always receives raving reviews and was in desperate need of some fresh photos.
Triple chocolate muffins are a chocoholic’s dream come true. There is no other way of saying this. I am a chocoholic and I will never understand why some people say they eat less chocolate in summer because it is warm. Seriously? I don’t get what the wheather has to do with anything. I will eat chocolate, all the time. I love chocolate. Always. Period.
And I was craving chocolate when we moved from the north of Germany to the south. I don’t know, unpacking boxes, scrubbing the old apartment, decorating the new apartment, whatever the cause was, I wanted something very chocolaty, desparately. And then I thought of this recipe I had seen some time ago. If you don’t know the blog Bake to the roots, check it out, it is one of my favorite blogs.
Chocolate Brownie Cookies! Seriously, I can only recommend trying these! They are so melt-in-your mouth, it’s crazy! If you are a chocoholic like me, these are for you, they scream chocolate, chocoalte, and chocolate again. You need to know that I have tried my share of chocolate cookies, especially if I am in the mood for baking something with chocolate, but don’t want it to take too much time. Chocolate cookies are perfect for that occasion. Trust me, these cookies are for you if you want to whip up something quickly and that satisfies your chocolate cravings.
I have said this before, I will say this again, I am a huge chocolate fan. I love anything with chocolate. In fact, I am a chocoholic, I will eat chocolate at any time. So for that reason I wanted to give you my ten favorite chocolate recipes ranging from simple cookies to complicated cakes. Because now it is finally official that we are allowed to indulge ourselves in chocolate.
#1 Lava Cake
Few ingredients, so rich and perfect for any chocolate lover. This is to the present day my most popular recipe on my blog as well as on Pinterest. Lava cakes are really not that hard to prepare and I give you a foolproof method to ensure that the outside is baked while the center is gooey and liquid. Check out the post!
#2 The Best Chocolate Chip Cookies
I looked high and low before settling on these. You will not regret trying them, loads of chocolate chips and so buttery and yummy, a simple classic you will make over and over again.
#3 The Best Chocolate Cupcakes
They are so moist, so chocolaty and the frosting is just the best. Try these chocolate cupcakes, you never want to go back again.
#4 Cherry Chocolate Mousse Cake
This is a decadent cake that combines chocolate mousse with cherries. A must try for anyone who loves chocolate with cherries!
There hasn’t been enough chocolate on this blog yet. So Sachertorte it is! Ever heard of this delicious chocolate cake? It was invented in Austria and it has all the good stuff, lots of butter, lots of eggs (10 in total!), and chocolate, of course. Don’t bore me with cocoa, no, let’s go straight to chocolate. And with these delicious ingredients you make light and fluffy chocolate sponge cake. And to keep it all together, you use apricot jam as the glue. I just love it.
I actually had the chance to eat it in Austria. Originally the cake comes from Vienna, I did have the chance to eat it in Vienna, but, gasp, didn’t like it that much. The one I really enjoyed a lot was in Salzburg, the town Mozart is from. Below picture was one of the first pictures I took with my current camera, the Sony Nex7. If you would like to learn more about food photography, please check these blog posts. I looks great, doesn’t it? Austria is busy exporting its Sachertorte. I can’t blame them for doing that. Because yes, you want to dig into this super rich cake, believe me! What I like best about this rich chocolate cake is that you can actually export it because it gets better over time. The apricot jam seals everything and just to be sure, you pour a thick layer of chocolate ganache on everything, because more chocolate is even better, isn’t it?

I believe it is time to say goodbye to summer. At least here in the north of Germany you can tell, the nights are getting chilly and the days are definitely getting shorter. For that reason I decided to celebrate the change of season with a chocolate layer cake with lots of berries. Mind you, the strawberries are not imported, but actually from Germany. But regardless of what type of berries you have at hand, I am sure you will love this cake. Just make sure you find some tart berries and you will be good to go. The sweetness of the chocolate combines nicely with the brries, believe me.
Disclaimer: If you are a strict vegan, Oreos may have had milk cross-contact. In this instance, this recipe is not for you.
Vegan Oreo cupcakes! Yes, you read right, vegan cupcakes. You may wonder why I am posting a vegan Oreo cupcake recipe. Well, the thing is that this vegan Oreo cake is one of my most popular blog entries. If you like a layer cake, you may also like vegan Oreo cupcakes, that’s what I figured.
So I started looking for a good vegan cupcake recipe, which I found here. I added some chocolate chunks for good measure. And then I wanted to use Ermine frosting. That’s frosting prepared with a flour base to thicken the butter/margarine and make it pipable. I used the non-vegan option in these lavender cupcakes and also in order to frost a cute cookie monster on this non-vegan cookie cake. Ermine frosting is slowly becoming my favorite frosting as it is not as sweet and, as you can see here, also is great for vegan buttercream. This time I decided to use a real vanilla bean (yes, they are expensive) to get really nice vanilla flavor.
Summer is here and I am posting my very first ice cream on this blog, yay! It is a double chocolate ice cream with a raspberry swirl. It actually is so good, I barely managed to take pictures of it, we just had to eat and eat and eat it. Continue Reading…
