Delicious Strawberry Stracciatella Cake

I have a super delicious strawberry stracciatella cake for you for Mother’s day! I won’t deny it, this cake is quite a bit of work, but in my opinion that’s OK for showing your gratitude for your mom. The base is a vanilla sponge cake, which is then filled with a strawberry stracciatella filling and topped off with a Swiss meringue buttercream. I decided to brush the cake layers with some coffee to keep it moist. Also, before we fill the cake, we are going to spread some strawberry jam on each cake layer. This all will help for the cake to stay moist even on the third and fourth day and also gives you the chance to prepare it in advance.

Today I am going to introduce the best Belgian waffles, thick and yummy! These are overnight waffles, the batter is prepared the night before and you basically need to heat your waffle iron the next morning to make this deliciousness. Perfect for any brunch plans, for a weekend breakfast or for anything fancy you wish to make for beloved family and/or friends. I love the crisp outside (you will get lots of tips for that below) of these waffles, yet their interior is nice and soft. Whisk together the ingredients the night before and let the yeast make its magic overnight. So simple, yet so yummy.

(Key) Lime Pie

Amerikanischer Key Lime Pie

Today we have American (key) lime pie. This pie is traditionally from Floriday and hence uses the limes from the keys in Florida. Key limes are smaller and sweeter in flavor than regular limes. However, since I am located in Germany and can’t get hold of key limes, we are going to use regular limes for this lime pie. I personally love serving a citrus dish in winter. I love this tart and refreshing flavor on a winter day. You don’t even need to make whipping cream, you can also enjoy this pie in its very pure and simple form. I like it best on day 3.

Fruity Raspberry Sponge Roll (with Video)

This is a fairy dream come true. I made this fruity raspberry sponge roll the first time for our ten-year anniversary. Sooo good. This is a light and fluffy sponge base, filled with lots of raspberries and whipping cream infused with raspberry jam. This recipe is so delicious, I felt like filming it. So far there is only one more recipe video on my blog, if you would like to check out my brownie cookies, it has been the most popular recipe for a long time now. But let’s get back to this fruity raspberry sponge roll. I love sponge rolls because they only need between 8-9 minutes to bake. I find them perfect if you have company coming over. If you are a seasoned baker, you will be able to present a super delicious sponge roll in no time.

Apricot Sheet Cake just like from Granny

My granny was the queen of yeast dough. I cannot recall a single time that her yeast dough was anything else but fluffy, soft, and most delicious. I will never forget her sheet cakes prepared with yeast dough. Complimented with lots of fruit and crumbs, they were always a highlight for me. In low German these sheet cakes are called “plautz” and they have always been one of my favorite. I especially liked trying the middle piece of any sheet cake. This piece gives you a lot of fruit, a lot of crumbs, with just about the right amount of dough. My granny didn’t mind giving me the middle piece of a sheet cake. Which I of course loved. I have been thinking about her famous sheet cakes for a while now. However, since she passed away recently, I knew I had to bake a cake since she was not going to. I inherited her recipe book, which I cherish. But unfortunately, I didn’t find a lot of yeast dough recipes. Probably because she knew it by heart.

Shame on me,  I haven’t posted enough slab cakes even though I really like them. I prepared this simple slab cake with an abundance of strawberries and whipping cream the first time about a year ago when we had a large family gathering. I count myself lucky for having managed to snap a picture of a cut slice, it was gone within seconds, it took my relatives very little time to consume. No wonder, because it is so delicious.

Is it OK to say “Happy Easter”? I do believe so. To be “happy” also means to be relaxed and baking definitely relaxes me. Baking is my way of dealing with the crisis, it is a wonderful method to beat depression and sadness. Yes, I also know people who got fired or are now working part-time. But regardless, I do see Easter as the feast of hope despite all the horrible things currently happening. And for that reason I decided to make macarons according to the Italian method. I already have a few macarons recipes on my blog, my very first try, strawberry macarons with no food coloring as well as coffee macarons with dulce de leche filling. But all of the listed recipes follow the French method. This is the very first recipe according to the Italian method. I will explain below what this entails.

Vegan Meringue Nests for Easter

I don’t know about you, but suddenly I am forced to cook all the time. So the other day I made a chickpea curry which lasted a few days and was really delicious. It has taken me a while, but now I know that you shouldn’t throw away the chickpea water, this can be beaten into meringue. Truly delicious meringue. For me this still is such a surprise, every time I beat this weird liquid into meringue, it is like a true miracle. Called aquafaba, I have to say, I am excited each and every time. It truly tastes just the same as meringue made with egg whites. And since I am a huge fan of meringue, I wanted to make a vegan version of it. Hence these vegan meringue nests for Easter were born.
