When Meghan Markle and Prince Harry got married in May 2018, the combination of lemon and elderflower were all the rage. Yes, I also made a mini three-tiered elderflower lemon cake. Today, I decided to give this combo another chance. This year elderflowers are in full bloom at the moment, so you may even have the chance to make the cordial yourself. The new version of this royal combination contains moist lemon sponge cakes, lemon curd and a heavy cream and mascarpone filling infused with elderflower cordial. My cake only has one tier and I decided to decorate it with dried flowers and some fresh elderflowers. However, it is up to you how you want to decorate your cake.
May 20th is the worldwide Bee Day. For that reason I decided to publish a recipe with honey, today you will get a honey lavender bundt cake. In addition, I am giving away 1x honey jar from Münchner Honig, which was produced by the bees you see pictured here, 1x set of bee wax papers from Little bee fresh and 2x seeds to make a tiny meadow on your balcony to give the bees some flowers to take nectar from. How to be part of this, I explain below.
Did you know that working bees only live for six weeks? During that time they produce about a teaspoon of honey. Next time you complain about the price of honey, you know why. Considering that bees need to fly three times around the earth in order to produce one jar of honey, I would say honey is pretty cheap, don’t you think?Münchner Honig, so honey from Munich as a hobby. She was kind enough to allow me to take pictures of her while she was bee-keeping. While doing that, I learned a lot about bees. I am still amazed as to how much a bee is able to do (they have different jobs during their lives). At least I was not aware how much effort is put in one jar of honey. To think that for below recipe about 85 bees had to work all of their lives in order to produce the honey needed… wow, I never thought about that.
Finally strawberry season is upon us. I thought I would introduce cute little strawberry cupcakes to you guys shortly before Mother’s Day. They are easily prepared and would be such a sweet gift. If you transport the cupcakes without the forsting, you can even travel a bit. I recommend swirling on the frosting shortly before serving. I mean, who wouldn’t love a lemon cupcake with strawberry-jam filling and whipped cream that is infused with freeze-dried strawberries?
Pavlova, a meringue nest with whipped cream and mango filling, who wants a piece? I am going to introduce this recipe from Australia/New Zealand to you. Reason for this being my hubby, who requested pavlova for our 12-year anniversary. There is a similar recipe in Colombia, called merengón with berries, whipped cream and meringue. No wonder that he wanted something similar. Pavlova is, compared to meringue, slightly different. You do have a crunchy outside, yet since you fold in a bit of cornstarch and vingear, the inside remains creamy (see picture below) which is similar to marshmallows. Does this sound like something you are into? Then you should give pavlova a try.
Finally, today I am going to show you a basic yeast dough recipe, this is a raspberry yeast wreath, which is a wonderful treat for breakfast or if you want something nice with your coffee.
It’s about high time for another sponge roll. This time I am offering a refreshing lemon sponge roll, which is perfect for winter days. The vanilla sponge contains lemon zest as well as lemon juice and obiously the same holds true to the filling as well. For the extra kick, we will brush the roll with some lemon syrup.
Today you will get a simple, yet extra moist and very lemony lemon loaf or lemon pound cake. If my hubby were to decide, I am sure I would be making cakes with citrus fruits all the time. It is by no accident that my first published recipe is a French tarte au citron oder lemon tart. I made it for Valentine’s Day and published it shortly afterwards. My list can go on and on, I do have double lemon cupcakes, blueberry lemon cake, American lemon pie and (key) lime pie on the blog, I think it is endless. All of these baked goods were for him, of course. He just loves this tart flavor and I won’t say no to lemons and limes either. Especially in winter when fruits are harder to get and the options limited. So I decided to make a simple lemon loaf. The recipe I found used tons of lemons so I gave it a go and the result is full of lemon flavor.
Update: I rewrote the recipe a bit in 2021 and took fresh pictures
It’s summer! Officially! So I need something fast, something refreshing and also something healthy. That’s why I invented this frozen strawberry cake, which can be done in less than 15 minutes. It is pleasing to the eye and everybody will love it, I promise. It may be one of your new go-to recipes. I at least have it stored as a new favorite. I honestly was surprised. I usually don’t invent cakes. I like to change recipes to me liking, I like to alter them. But start one from scratch? I don’t know what happened, but for some reason I just felt like throwing some strawberries together and hope for the best. I usually don’t mind following a recipe, but this time it was just an impluse reaction, why not mix strawberries with some crunchy almonds? I took quite a risk there, because this cake was a birthday cake for a friend of mine. And since he likes strawberries and since it is summer, I came up with this beauty.
We finally need another German recipe on the blog, for that reason you will get the typical Snow White Cake aka Donauwelle. But I am serving this classic with a twist, you will get it with strawberries instead of cherries. This cake contains a marbled cake base (another super German recipe) into which you press some cherries (normally), followed by a layer of German buttercream and topped off with a chocolate layer. Beside the Black Forest Cake this Snow White Cake is super German for me. But since I was not in the mood for canned cherries, I decided to use a lot of fresh strawberries, so my buttercream contains chunks of strawberry. The chocolate layer also has some strawberries tucked inside. Because why not? Continue Reading…
Guys, we need to celebrate! We need to celebrate as we managed to move within the city of Munich, we need to celebrate as it has been three years since my horrible bike accident and I don’t have any permanent damage. We all need to celebrate as during COVID19 we need to hold on to special moments and celebrate life. In this monochromatic time when working from home means that every day looks exactly the same, we need to put time aside to enjoy the moment. For that reason I brought a fruity and moist Piña Colada cake to the party. It contains some coconut sponges, which are filled with pineapple filliing and is then frosted with a coconut yoghurt cream. Of course it is also soaked in some rum. In my opinion this is the perfect cake if you wish to celebrate.
