Simple Strawberry Cake

This simple strawberry cake is perfect for any summer gathering, it is easy to transport and has this vibrant color and also taste to it. You may wish to take it to a picnic . It is packed with 500 grams of fresh strawberries and zest from two lemons. I sprinkled it with sliced almonds, but that is optional. Just grab a piece, enjoy the sun and take a bite, yum. This is one of these cakes you are going to bake over, and over again. Tip: if you carry it with the parchment paper still below, it is super easy to lift out and cut, so delicious for any gathering…

I made this cake for the first time when we had to bid farewell to a colleague of mine. So this meant I baked it in the evening, could smell it and only was able to taste it on the next day. But man, was I sold when I tried it for the first time! Nothing was left, so I had to make it again very quickly. I grant you, this cake is wonderful to make over and over again in summer.

Simple Strawberry Cake

Serves: One pie, about 23-24cm in ∅

This simple strawberry cake with lemon zest comes together in about half an hour and is perfect to take along.


  • Zest from two organic lemons
  • 120 grams of regular sugar
  • 100 grams of butter
  • 500 grams of fresh strawberries
  • 40 grams of neutral oil
  • 175 grams of buttermilk
  • 3 eggs
  • 1 teaspoon of vanilla extract
  • 285 grams of all-purpose flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • Optional: about 50 grams of sliced almonds



In this video. Preheat oven to 180 degrees Celsius, line a tart form or cake form of about 23/24cm or 9 inches with parchment paper. I like to crumple it first and then unfold in the form.


Zest the two lemons and rub the zest with your fingers with the sugar, this will intensify the flavor. Place into a large bowl. Melt the butter and set aside. Meanwhile wash and hull the strawberries, cut into cubes one half, the other just cut in half. Set aside as well.


Now add cooled-off butter, oil, buttermilk, eggs, and vanilla extract to the sugar mixture and give it a whisk. Add flour, baking powder, and baking soda and whisk until you see no further lumps.


Spread half of the dough in the prepared cake form, then sprinkle the cubed strawberries on top, spread the second half of the dough on top and now arrange the halved strawberries on top, You can create a pattern, I like to have some facing upwards and some downwards for visual interest. If using, sprinkle almonds on top.


Bake for about an hour, an inserted toothpick should come out clean.


You may serve plain, with a bit of icing sugar or a dollop of whipping cream.
