Rhubarb Strawberry Crostata

Today I am presenting a rhubarb strawberry crostata or rhubarb strawberry galette. You may call a crostata or galette the cousin of rhubarb pie or rhubarb tart. Yes, you have pie dough, but you just roll it out to a circle, arrange the fruits in the middle of it, and then you fold the edges toward the middle. There is no lattice pattern, no need to decorate, or even using a pie dish, this is much faster and easier. I was very much in the mood for a simple and quick tart, so here it is. I hope you enjoy it as much as I did making this crostata. If you prepare the dough the night before, it comes together in a jiffy.

Finnish Strawberry Cake “mansikkakakku” and Why I am Celebrating

Today I decided to open strawberry season, I am celebrating with this delicious Finnish strawberry cake called “mansikkakakku” (which literally translates as strawberry cake). The cake consists of fluffy sponge cake, whipping cream and lots of strawberries, I tell you, even though it is only the two of us, we managed to eat this cake within a few days, we loved it. This is the cake version of the strawberry sponge cake. Reason for this decadent cake is simple, I am celebrating. I am celebrating to date exactly six years ago I had a horrible bike accident including brain bleeding, but I didn’t get any permanent damage from it. Roasted Strawberry Pie

Today I am presenting a roasted strawberry pie with some braided topping. My strawberry season was extremely long this year. I started in Spain on holiday where they were already at the end of the season to return to Germany and continue. Here in Munich lockal strawberries are just available now, so I have been eating fresh and local strawberries for quite some time now. I didn’t know this, but roasted strawberries are even better than just baked strawberries, believe me, this is a special treat.

It barely ever happens, but this does coincide. This recipe is the same in Germany as well as Colombia. Today I am presenting a strawberry sponge roll from Germany or brazo de reina from Colombia. This sponge roll is super easy to make and is filled with heavy cream and cubed strawberries. If you are expecting guests, I highly recommend this roll as it is easy to prepare and fast to make. Strawberry Tiramisu with no Raw Egg or Alcohol

Strawberry tiramisu with no raw egg or alcohol, who would be interested in a piece? It probably comes as no surprise that I am a huge fan of tiramisu as it contains my beloved sponge cake. I love tiramisu with a fruity flavor. For that reason you can already find a strawberry tiramisu cake on my blog as well as the Brazilian version with peaches.  Today I wanted to introduce the “classic” version. But I am using the word classic lightly as we will make the ladyfingers ourselves and will simply make one full layer instead of single ladyfingers and we use the fruit strawberry. Try to imagine a tiramisu sweetened with elderflower cordial, a slightly lighter cream with mascarpone and farmer’s cheese with no raw egg and strawberries sandwiched in between, once as puree and once fresh. I did enjoy this dessert a lot!

This is the perfect cake for Valentine’s Day, a moist and decadent strawberry chocolate cake. Who would like to get a piece of this deliciousness? The cake is made of a devil’s food cake, the filling is made with real strawberries and since it is not the season yet, we will use frozen strawberries. The final touches are a chocolate drip and fresh strawberries dipped in chocolate. Who wants a piece?

Meringue Cake from Mexico or mostachón de fresas

Today we have a Mexican cake from the north called “mostachón de fresas.” Its base is a nut-based meringue (including crackers) a cream-cheese topping and of course strawberries. I learned that you can basically decorate with any kind of fruit. In Mexico mangos are pretty popular, but I figured since we have strawberry season and strawberries are also popular for this cake, I would stick to the traditional version. It may sound like a strange combination, especially the salty crackers, but my husband and me loved it.

Strawberry Lemon Cupcakes

Finally strawberry season is upon us. I thought I would introduce cute little strawberry cupcakes to you guys shortly before Mother’s Day. They are easily prepared and would be such a sweet gift. If you transport the cupcakes without the forsting, you can even travel a bit. I recommend swirling on the frosting shortly before serving. I mean, who wouldn’t love a lemon cupcake with strawberry-jam filling and whipped cream that is infused with freeze-dried strawberries?
