Lemonies or Lemon Brownies

We were fortunate enough to go on vacation in the north of Spain and in Portugal in spring 2023. During our trip I got to see tons of lemon trees. Many seemed to be completely abandoned. Some had half their lemons lying on the floor, which made me hurt. So I started to pick them up. Sometimes I asked whether this was OK if I saw anyone around, but nobody seemed to mind. This resulted in me having lots of lemons during our holidays, so I got to work to use them all properly. Zorra from the blog Kochtopf (in German) publishes a lot of lemon recipes. She lives in Spain and often talks about the abundance of lemons available. So I know I would find something interesting on her blog. The below recipe is from her, I love the fudgy texture of these lemonies. Don’t think of these as a lemon loaf, but rather than brownies with lemon flavor, you will enjoy them. You may see it on the featured picture, these bars are not in any way comparable to a lemon cake. As stated before, these are similar to brownies and are rather fudy. Just type in “lemon” or other citric fruits in the search bar. But let’s get back to the bars. You don’t even need a mixer, everything can be done by hand. I can highly recommend these to give them a try.

Lemonies or Lemon Brownies

Serves: About 9-12, depending on size

These lemonies or lemon brownies are tart and only require you to mix by hand.

Ingredients

  • Lemonies
  • 200 grams of regular sugar
  • Zest for three organic lemons
  • 200 grams of butter
  • 3 eggs
  • 80 grams of lemon juice
  • 260 grams of all-purpose flour

  • Glaze
  • 100 grams of icing sugar
  • About 15 grams of lemon juice

Preheat the oven to 180 degrees Celsius and line a 20cmx20cm brownie form with parchment paper. I like to crumple up mine before straightening it out in the pan.

For the Lemonies weight the sugar in a smaller bowl, the grate the lemon zest on top and rub between your hands. If using a spoon, press down on the sugar so that the flavor intensifies. The jucie the lemons and set the lemon juice aside.

Melt 200 grams of butter in a bigger pot and add the sugar mixture, stirr. Add the eggs and the lemon juice and stir again. Sieve the flour on top and whisk until everything is combined. Pour into prepared pan and bake for about 20 minutes. The edges should be slightly golden, but they will remain rather pale.

For the glaze mix icing sugar with lemon juice and spread over lemonies. Once everything has set and cooled off, lift out of the pan and cut into 9 pieces or if you want to, 12 pieces. You can take off the rim for the squares to look prettier. You can eat also on the second and third day, the flavor will intensify.
