Creamy Cherry Chocolate Mousse Cake

Today I am going to introduce you to an old friend I have, but in a new outfit, I am talking about the creamy cherry chocolate mousse cake I already have on my blog. I actually made the recipe simpler and added more cherries to the mix. Whoever knows me, knows that I am a sucker for fruity cakes, pies, and tarts. In this instance, I felt about double the amount of cherries would be just perfect. I am still proud though that I won a prize with the original recipe. The award was for me and a person of my choosing to visit the beautiful city Tübing in the south of Germany and actually attend the chocolate festival they display every year. For the dressed-up recipe I decided to go for a 20cm/8inch cake instead of 26cm/9inch cake, with about double the amount of cherries and a much simpler chocolate mousse with no raw egg in it. Finally I am introducing the basic recipe for arepas on my blog! Arepas are a flatbread made from cornmeal. They are most popular in Colombia and Venezuela. As a German I have to say that these countries offer the same kind of varieties of arepas as breads are offered here. I already introduced arepas boyacenses, however, so far the basic recipe was missing. The reason being simple, I just felt I still didn’t know how to make perfect arepas even though it only consists of three ingredients, cornmeal, water, and salt. But now the waiting is finally over, below I am offering many tips. Hopefully they will make you confident enough so that your first arepas turn out great from the start. If making the very basic recipe, arepas are naturally gluten-free and vegan.

Classic Hummingbird Cake with Pineapple Flowers and Hummingbird Cookies

Today I am introducing the famous hummingbird cake to you. There is a simple reason for that. It has to do with the fact that I love animals and birds in particular. Since I was born in Uruguay in Latin America, I had the privilege of watching these tiny birds close to our house. I find it extremely fascinating how these birds need to constantly eat as otherwise they wouldn’t survive. Every 15 minutes they need to drink nectar. Since these birds are so pretty, I decided that my cake definitely also need hummingbirds on the outside, clearly displayed. So I figured that I would dry some pineapple slices and use them as flowers the hummingbirds would be drinking from. The hummingbirds are made from sugar cookies. So I warn you, if you make my version of this cake, it will require a lot of work. I believe it is so worth it, but you are free to make it without the fancy decorations. Because, who doesn’t like hummingbird cake?

I do have a few eclairs on my blog, today I am introducing eclairs with coffee filling, dalgona stlye. I also have  black forest eclairs, eclairs with peanut butter filling, or eclairs with raspberries on my blog to name only a few. So why the need for another eclair recipe? The reason is two-fold. Reason number 1 is my hubby, who can eat eclairs every single day. His face will light up once I say eclair. We have been to the south of France a few times and he would always either buy eclairs or tartelette au citron in the boulangerie as one of the first actions. And the second reason is because I had to try Dalgona or whipped coffee finally in a recipe.

Classic Red Riding Hood Cake from Germany

Have you ever heard of the red riding hood cake we have here in Germany? Well, it is a cake with a very red glaze, smooth as glass. Its shiny color reminds you of the red riding hood and hence it got its name from this tale.  The base of this impressive cake is like a marbled cake, which is dotted with cherries. The second layer consists of whipping cream mixed with quark and the third is a glaze made with cherry juice. Welcome to a German fairy tale!

We Are Celebrating Life: Rich and Creamy Chocolate Cheesecake (No Bake)

Guys, today is a special day for me. Exactly two years ago I had a horrible bike accident. Including hemorrhage. It is a special day for me as I didn’t get any long-term damage. Yeah, it did take a while for me to recover, but I made it back with a clean health bill. And since this is a special day for me, I always make a special cake on this occasion. Last year I made this vegan Oreo cake and the previous year I made one gigantic cookie with the cookie monster on top. Needless to say that I am a huge cookie monster myself. Yes, all of these cakes are very decadent and rich, I am celebrating life and don’t want to hold back. Yes, this year’s cake is decadent as well. This rich and creamy chocolate cheesecake is anything but healthy. In total we have 400 grams of chocolate and 600 grams of heavy cream. I promise you, if you are a chocoholic like I am, you will love this cake. But be warned, you won’t manage to eat more than a small slice. For that reason I made it in a 20cm/8inch cake pan because you really don’t need a lot to satisfy your chocolate craving. And I am saying this as somebody who can eat chocolate all the time, regardless if it is summer or winter. I will never understand why some people say they don’t need chocolate in summer. I definitely do. If you are the same, this cake is for you.

Vegan Meringue Nests for Easter

I don’t know about you, but suddenly I am forced to cook all the time. So the other day I made a chickpea curry which lasted a few days and was really delicious. It has taken me a while, but now I know that you shouldn’t throw away the chickpea water, this can be beaten into meringue. Truly delicious meringue. For me this still is such a surprise, every time I beat this weird liquid into meringue, it is like a true miracle. Called aquafaba, I have to say, I am excited each and every time. It truly tastes just the same as meringue made with egg whites. And since I am a huge fan of meringue, I wanted to make a vegan version of it. Hence these vegan meringue nests for Easter were born. My Nine Favorite Colombian Dishes

Today I will give you my personal favorite nine recipes from Colombia. You will get main courses, snacks, and desserts. I have been married to a Colombian for ten years now and therefore had the chance to try many Colombian recipes. I was also fortunate enough to visit this beautiful country several times. I am often asked what Colombian cuisine is like. The only simple answer is: this depends. Colombia is a country of vast different climates, you don’t have jungle only, but mountain chains and savannas. Apart from the Caribbean you also have a dessert, therefore it is very hard to pin it down to just a few dishes. Colombia has a wealth of potatoes, you will also see many different types of corn. Typically, a lot of dishes do not contain gluten and are prepared either with potatoes, corn or starches from manioc, etc. Many people are surprised when they learn that Colombian cuisine is not spicy at all, cilantro and cumin are often used as well as annatto, which has a vibrant red color and is simply called “color” in Colombia. I don’t claim at all that these nine dishes are the most typical Colombian dishes, these are simply my favorite recipes.
