Are you a cheesecake fan? Even if you aren’t, you will love this one, I promise. I promise, because I am not a big cheesecake fan myself (yeah, I know), but I devoured this one. Actually, we had this beauty for Christmas because it was THAT good. And if I make a cheesecake for Christmas even though I am not a big fan of cheesecakes, it does tell you something about this cake. Seriously, it is awesome! I bake a lot, but I have never had so many people react to a cake that strongly in a long time.
Bread is a huge thing in Germany, in case you didn’t know. The one thing Germans miss the most when living abroad is bread. We do love bread. My grandpa always says bread is very precious to him. When I spent a year in Canda after highschool, I started to bake my own bread after a while. I hated the squishy Canadian bread. I wanted something with whole wheat and rye, something which filled me up and kept me going for a long time.
I had the opportunity to travel to the home country of my husband: Colombia and I feel in love with arepa boyacense. Let me tell you, this country has so much more to offer than only jungle. The mountain range the Andes come to mind, but it also has savannahs, a dessert, the Caribbean and the famous coffee region. The diversity of species is something to admire. Colombia has more than 100 (!) humming birds only. Even in the capital Bogotá with more than 10 million inhabitants you will encounter humming birds amazing you with their acrobatic movements. The variety of fruits is also astonishing. I ate fruits I had never seen or even heard of. For a penny you will get the juiciest and and sweetest fruits. The pictures I took barely capture the beauty of this country.
Colombia is a very colorful country. Maybe the huge variety of species and a general carefree attitude towards life are reasons why food is extremely important. One of the first questions I was asked during our holiday was how I liked the food. Yes, we had to explain what our travel plans were, but soon after that the conversation turned to food, inevitably. I usually replied with arepa! Arepas are as important to Colombians as bread is to Germans. Arepas are a simple corn bread and usually either fried, grilled or baked in the oven. They are served for breakfast, but you will also encounter them for lunch and dinner. Arepas come in all sizes, they are gluten free as they are made of corn flour and each region has its own variety.
Chocolate and beetroot? I had read before that beetroot is supposed to make a chocolate cake great. I haven’t tried that yet, but thought I would give it a shot. I mean, it does sound weird, I give you that, but if it really is as moist and delicious as people have claimed, I wanted to give it a go. So I finally got around to making a very chocolaty bundt cake and this time I wanted to see whether beetroot really could work its magic on it.
Can I confess something? I am a chocoholic and for that reason have an entire only chocolate category on this blog. I really don’t care, be it summer or winter, I will happily eat chocolate. Except for white chocolate. I don’t know why, but we simply don’t get along. But offer me any of its siblings and I am in. Be it milk chocolate or chocolate with 85% cocoa, I will eat it. I would say that my consumption of chocolate isn’t lower in summer, rather, it is higher in fall and winter. You can easily find me with something chocolaty in my hand while snuggling under a blanket. Chocolate is soulfood!
I feel it is time for some chocolate. Maybe it’s because I didn’t eat chocolate for three weeks. I wanted to look pretty for my birthday. So I restricted myself to eating relatively healthy, no sweets and no chocolate. That was really hard for me. Three weeks without chocolate? As a chocoholic I am proud to say that I managed. I was allowed to drink one small cup of cocoa per day, but that was about it. I know that a lot of people say they don’t crave chocolate in summer. I am definitely not one of them. I can have chocolate day in and day out. Summer or winter. If there is chocolate, you will find Jenny around.
Yay to Chicago-style pizza, my friends! Everybody has an opinion how the perfect pizza is supposed to taste like. There are huge fights about the pizza dough, the thickness, the crust, the amount of cheese, the toppings. I know. I am not getting into that. I am simply going to introduce you to a pizza which is more like a pie. And since I like pie, I was excited to try this one. Deep-dish pizza is another term for this pizza. Because you need a springform. You will put so much cheese and tomato sauce onto it that the regular circle simply doesn’t cut it. Chicago-style pizza is my new favorite. It starts with a very buttery dough, which is then sprinkled with mozzarella cheese (yes, the cheese goes on the bottom), then comes some chorizo (if you like it to be non-vegetarian) and then lots and lots of tomato sauce. Let’s have a closer look at each layer:
Are there any cookie monsters out there? I for sure am one of them. I love chocolate chip cookies. The basic recipe. I really love the good old-fashioned chocolate chip cookie. Plain, fresh out of the oven with a glass of milk and I am in heaven. I used to like the cookies from Subway. I loved them so much, I started looking for a recipe that would come as close as possible to the Subway recipe.
Today I made a one-pot vegetable lasagna. Since my husband broke his ankle a while ago, I have to be the housewive and so I thought I might as well see what I can do with pasta. I mean, everybody loves pasta, right? While checking what options are out there, I stumbled across the one-pot lasagna. Have you every heard of it? I hadn’t. The basic idea is to create lasagna in one pot. So no horrible preparation of different sauces and then layering everything into a dish and then finally putting the lasagna in the oven while you are already snacking because you got so hungry during the process. No, here you simply make the whole lasagna in a pot. You do need a deep skillet for this with at least 30cm in diameter and you need a lid. But other than that, this is really simple. So as I said, the basic idea is that you cook the lasagna noodles in tomato sauce. You need to be sure to have enough liquid to get them nicely cooked, but since you are doing everything in the skillet, the lasagna is ready much quicker than if done the traditional way. Once you chopped the vegetables, this lasagna is ready in half an hour. I don’t think you can beat that.
Let’s talk about cookies. Cookies are my comfort food. Cookies are the best. I prefer them to a fancy dessert any time. I know, I am crazy, but cookies call me from afar. They remind me of my childhood. They usually don’t require that much time to prepare and they are easy to freeze, to ship, to make somebody happy, including myself.
