Guys, I feel like celebrating with this cookie monster cake! Some of you may have seen it on Facebook that I had a bike accident a while ago. Not to bore you with the details, but I was in the hospital for almost a week and on sick-leave for four more weeks afterwards. So I had to stay in bed a lot and I felt like comfort food. As a proclaimed cookie monster it was quickly decided that it was going to be a skillet cookie. I mean, if you don’t make the cookie monster on top, you don’t even have to form the cookie, you just pat everything into a skillet.

Strawberry pancakes with strawberry sauce! I wanted to start my blog event with the strong color RED and with my favorite meal of the day: BREAKFAST! In fact, I have made this recipe for Saturday breakfast so many times already, I don’t know why I haven’t posted it yet. It is so good, the key words are light, airy, fluffy, and with a strong strawberry flavor, batter as well as sauce. Because, of course, I also added strawberries to the pancake batter, not only the strawberry sauce, which is full of pureed strawberries, some lemon and a bit of sugar.

I feel it is time for some chocolate. Maybe it’s because I didn’t eat chocolate for three weeks. I wanted to look pretty for my birthday. So I restricted myself to eating relatively healthy, no sweets and no chocolate. That was really hard for me. Three weeks without chocolate? As a chocoholic I am proud to say that I managed. I was allowed to drink one small cup of cocoa per day, but that was about it. I know that a lot of people say they don’t crave chocolate in summer. I am definitely not one of them. I can have chocolate day in and day out. Summer or winter. If there is chocolate, you will find Jenny around.

I love lemon. I always have. I like the smell, the taste, the color. Probably one of the reasons why I chose a lemon tart as my first blog entry. The good thing is that my husband also loves lemon. He is the citric guy anyway. He also enjoys oranges, limes, and grapefruit. The whole package. Even more the reason to try a recipe with a citric fruit. Why not go with a lemon recipe?
