This blog post is “posh” as I will be serving British Afternon Tea with shortbread cookies with edible flowers and some maple bacon cupcakes. This is due to the fact that it’s celebration time. I will always find a reason to whip something up. This can be anything, the classic cake needed on Sunday afternoon, or because I want to cheer up my colleagues on Monday, because a difficult case at work finally came to a close, you will soon realize that there is always reason to celebrate. This is something we tend to forget. In the mundane life of ours we hustle and bustle, but forget to just sit still and celebrate the special moments. And this time is an extra special moment. Zorra from the German blog Kochtopf is celebrating her 15th blog anniversary. Ha, I am such a baby blog compared to hers. My blog is about two and a half years old. But anyway, Zorra is inviting us virtually to a British afternoon tea asking us to whip up a recipe. Well, that’s something I can get behind!

Peach and Blueberry Coffee Cake

Aren’t coffee cakes the best? They are so unassuming, don’t need that many ingredients and it does not take that long for you to actually get to the baking state of this cake. At least this peach and blueberry coffee cake is prepared quickly. You will have to cream the butter, add the sugar and cream a bit more, add eggs and vanilla extract and from there is basically is done. OK, let’s say the hard part. The rest is mainly waiting. So if you are not in the mood for being in the kitchen forever, how about this peach and blueberry coffee cake?

Iced Coffee Cheesecake, no bake

Iced Coffee Cheesecake you don’t have to bake! That’s the star of today’s post. People have told me that it tastes a little like tiramisu, but it does not contain mascarpone or raw eggs, this truely is a cheesecake, combined with whipped cream and coffee you will have creamy deliciousness on your plate. I didn’t go for the traditional cookie or graham cracker crust, instead I decided for pumpernickel. Not sure if you have ever heard of it, this is extremely dark and moist bread from Germany. Obviously you can replace it, but the sweet rye bread does add a very nice touch to this cheesecake.

Eiskalter Kaffee-Cheesecake ohne backenSo as stated, the bottom layer is a mix up pumpernickel, butter and coffee, which serves as the crust. The second layer is a mix of cream cheese and whipped cream with coffee flavor, the thrid layer is the same plus melted chocolate, and the top layer is whipping cream combined with chocolate, dusted with some cocoa powder.

It is high season for apricots and for that reason I was in the mood for something with apricots. These apricot dumplings are a popular Austrian dessert, which is also common in the south of Germany. Since I am a huge lover of apricots, I decided to make these. Unfortunately, I don’t have that many apricot recipes on this blog yet. You may enjoy these apricot turnovers, this delicious apricot tart, or this apricot sheet cake. Homemade apricot jam is also delicious on this famous Austrian chocolate cake Sachertorte. I love summer cakes, there are so many fruits to choose from. You can bake a berry chocolate layer cake, a strawberry tiramisu cake, a layer cake with peaches or the classic cherry black forest cake. But today I brought along this summery blackberry lavender cake.

Sommerliche Brombeer-Lavendel-TorteThe vanilla cake layers are brushed with lavender syrup, filled with blackberry jam, and the buttercream contains a lot of blackberries. I won’t deny it, this cake is quite a bit of work, but the good thing is that you can make it in advance. Let’s Grill Chivito, Uruguay’s National Dish

Barbecue and grilling season has started and for that reason I brought along the Uruguayan national dish: chivito. Chivito literally translates as “little goat”, even though it has nothing to do with a goat. Legend has it that an Argentinian tourist ordered something with goat from Antonio Carbonaro, the owner of the famous restaurant El Mejillón in Punta del Este. Since Antonio didn’t have any goat at hand, he came up with this burger/sandwich, which Anthony Burdain called the Everest of steak sandwiches: chivito.

Did anyone say you can’t bake cookies in summer? Ha, I would like to disagree with that statement, these raspberry chocolate cookies are prefect for summer. Raspberries, seriously, fresh raspberries scream summer all over. So here you go. I love raspberries with chocolate, in my opinion one of the best flavor combinations. If you don’t want to bake this, go ahead and look for something else, but I am in love with these chocolate raspberry cookies!

Easy Daisy Cake

Have you ever eaten anything with daisies? I hadn’t until recently. Funnily enough, daisies grow almost everywhere and don’t ask for much. But somehow nobody considers using them for cooking and baking. I find that extremely sad. We are not used to using herbs and flowers we find in nature. I recently had a conversation with somebody who was very surprised when she learned that elderflowers are not sold in stores, but that if she wanted to eat anything with elderflowers, she would need to harvest them herself. We have forgotten getting out into nature and cook up something with what we find.

Schneller Gänseblümchen-KuchenMany of the herbs you find outside can be used for cooking. The same holds true for flowers. I live in Munich with more than a million inhabitants, yet even in Munich I can find wild garlic, elderflowers and daisies. I find it important that we use the flowers we find growing around us. For that reason I used daisies as decoration in this cake. The ones you see on the top are candied daisies. I also use them in the second layer of the bar. Daisies make everything look pretty and candied daisies are a perfect decoration in cakes. That’s why I also used daisies to decorate this blackberry lavender cake.

Strawberry Pie with the Cutest Roses

Today I brought along the cutest strawberry pie with roses and a little heart. Below you will find step-by-step instructions so that your roses just look the same. This time I thought I would make a simple cake for Mother’s Day. If you want to have something more festive, try this chocolate strawberry layer cake or this strawberry tiramisu cake. But today I thought a very simple pie would be perfect. I mean, simple doesn’t necessarily mean bad, does this? I think I put as much love into this pie as into that layer cake.

Erdbeer-Pie mit süßen RöschenAs you can see from the pictures, this is a pie full of strawberries, in total it contains 800 grams of strawberries. Mind you, after having hulled them. Strawberry pies can be ticky, you don’t want the filling to be mushy. So for that reason I went with tapioca starch, which works better than cornstarch. But in case you don’t have tapioca close by, cornstarch will do.
