Banana pudding from the south is a layer dessert, you will have vanilla wafers (basically vanilla cookies), custard, bananas, and meringue on top. Usually this dessert is served in a casserole. However, since it is only the two of us and because I had never made this dessert before, I decided to serve this pudding in dessert glasses. I also reduced the amount and ended up liking a recipe for only four dessert glasses. If you like a creamy dessert with bananas, this is a recipe you should try. Of course we are going to make the custard ourselves, it is really not as hard as you may think.
I was not aware that the British Queen actually celebrated her 70th anniversary as a Monarch on February 2, 2022. Having reigned for 70 years, that is rare, as far as I understand she has broken all records. Obviously the Brits are celebrating, new stamps are being issued, there is going to be a tree in front of Buckingham Palace created out of 350 local British trees; yes, we all need to dress up for this special occasion and be on our best behavior. The Brits also announced a baking competition open to all people residing in the UK 8 years or older. The Platin Pudding was asked to be created. Apparently more than 5,000 people submitted a recipe. The winner is Jemma Melvin with a Lemon Swiss roll trifle with Amaretti. It is very time-consuming as all five different components are made from scratch. You can check her recipe here.
It is about high time that I finally introduce a recipe with plantain on my blog. Plantains are soooo versatile, they are often used as a side if green and are treated like potatoes. Once they are ripe and yellow, they are often used in desserts or as a sweeter component. Today I am going to show them as a sweet dessert with quince paste and melted cheese or in Spanish “platanos con queso y bocadillo.” It is a super simple dessert, which is etremely popular in Colombia. Normally you would use guava paste, however, as this is close to impossible to get in Germany, we will use quince paste instead. My Colombian friends revealed to me that it is close enough to revoke the sweetest memories.
Today I am going to introduce the best Belgian waffles, thick and yummy! These are overnight waffles, the batter is prepared the night before and you basically need to heat your waffle iron the next morning to make this deliciousness. Perfect for any brunch plans, for a weekend breakfast or for anything fancy you wish to make for beloved family and/or friends. I love the crisp outside (you will get lots of tips for that below) of these waffles, yet their interior is nice and soft. Whisk together the ingredients the night before and let the yeast make its magic overnight. So simple, yet so yummy.

Today I am introducing the famous hummingbird cake to you. There is a simple reason for that. It has to do with the fact that I love animals and birds in particular. Since I was born in Uruguay in Latin America, I had the privilege of watching these tiny birds close to our house. I find it extremely fascinating how these birds need to constantly eat as otherwise they wouldn’t survive. Every 15 minutes they need to drink nectar. Since these birds are so pretty, I decided that my cake definitely also need hummingbirds on the outside, clearly displayed. So I figured that I would dry some pineapple slices and use them as flowers the hummingbirds would be drinking from. The hummingbirds are made from sugar cookies. So I warn you, if you make my version of this cake, it will require a lot of work. I believe it is so worth it, but you are free to make it without the fancy decorations. Because, who doesn’t like hummingbird cake?
