Eclairs, it is about high time for eclairs again! These eclairs contain a creamy peanut butter filling and some chocolate. If you are a peanut butter fan, these eclairs are for you. If you like eclairs, but are not that fond of peanut butter, I also have black forest eclairs, cappuccino eclairs or eclairs with raspberry filling on my blog. I do recommend all of them.
Do you also bake your own birthday cake? I definitely did this year. When I saw this delicious blueberry lemon cake on the blog Knusperstübchen (in German) I knew this was going to be my birthday cake. Especially since I hadn’t eaten any sweets in week. I wanted to indulge in this beauty. Obviously I had to tweak the recipe a bit. But when I finally digged into the first piece, there was silence. Silence for a full piece of cake, this is how good the cake was. This is a super moist blueberry lemon cake as it contains a lot of fresh blueberries. I also like the fact that so much lemon zest and lemon juice is used in both, the cake and also the cream.
Disclaimer: If you are a strict vegan, Oreos may have had milk cross-contact. In this instance, this recipe is not for you.
Today I am introducing a delicious and vegan Oreo layer cake because I feel like celebrating. You may wonder why? Well, today exactly one year ago I had a horrible bike accident including hemorrage. I am sure glad I didn’t google damages you may get from hemorrage, I would have cried my eyes out.
I am extremely grateful that I don’t have any permanent damages and I can live a normal life. That’s why I am in celebratory mood. Hence this delicious and vegan Oreo cake. I was so excited introducing this cake here. I am always happy when I see people sneaking back helping themselves to a second piece. I have never seen a layer cake disappear so quickly, let alone a vegan one. That tells you how good this vegan Oreo cake is.
