German Heavenly Cake with Rhubarb

You have constantly asked when I will finally publish the recipe, so here it is, this is German heavly cake with rhubarb compote. This basically means you will make a traditional batter creaming the butter with sugar, but only adding egg yolks, then beat the egg whites into meringue separately, sprinkle with sliced almonds and then fill with whipped cream and rhubarb compote. No wonder you have constantly checked whether I will finally share the recipe, it simply is so good. I have made it several times just in the last few days.

Rhubarb Cake with a Pattern (Upside-down Cake)

Are you in the mood to create a cake that has a super pretty rhubarb pattern on top? Sort of like a puzzle? Then you should try this rhubarb cake. It is an upside-down cake, this means, you will have all the time of the world to create the pattern on the bottom of the springform before you even start preparing the batter and fill it up. Once everything has been baked, you are going to flip the cake upside-down. So now the pattern will show on the top, it is so pretty!  I personally find this so relaxing, it is so much better than yoga. It feels like a puzzle when you move the rhubarb pieces around to your liking.

Rhubarb Crisp from the U.S.

In the U.S. you will find desserts that contain a layer of fruit covered with some type of crumbs. They are called cobbler, crumble, or crisp. I brought today a rhubarb crisp and wanted to explain briefly what the similarities are and what are the differences. They all need relatively few ingredients and can easily be made by beginners. Would you like to give this dessert a try? I am sure it will miraculously disappear as quickly and easily as possible, there is only the two of us, however, it was gone so quickly. Super Easy and Quick Rhubarb Cake

You need a super easy and quick rhubarb cake that is simple to make and done rather quickly? I got you covered. We are going to make a dough that serves as the base as well as the crumbs. This dough does not need to chill like pie crust and this is also the reason why the cake is in the oven rather quickly. The filling also has to be prepared, but not be heated, it will be placed raw on the base and then baked to perfection. In Germany this cake is traditionally served with a dollop of whipped cream and/or icing sugar sprinkled on top. I originally had planned to dust the cake before taking pictures, but I somehow forgot. I digged into the warm cake and devoured two pieces, that is how excited I got!

Rhubarb Strudel

I am introducing rhubarb strudel to you today. I already have an article on how to make strudel dough from scratch on the blog. Of course I have an apple strudel on here as well. However, I wanted to include a spring version of strudel and decided to go for rhubarb. But try to imagine this, as a food blogger it can often take several weeks before a recipe goes on the blog. This means seasonal fruits/vegetables are needed very early on. I mean, you may make the recipe, you have to take pictures, you need to tweak the recipe, write it down, rewrite segments, etc. I am telling you, it takes a while. So when I was looking for rhubarb, it was still March. However, since I saw asparagus and strawberries being sold, which are usually in season at the same time, I thought I may also find rhubarb. But no, rhubarb, I was told, is definitely not available until April.

Rhubarb Strawberry Crostata

Today I am presenting a rhubarb strawberry crostata or rhubarb strawberry galette. You may call a crostata or galette the cousin of rhubarb pie or rhubarb tart. Yes, you have pie dough, but you just roll it out to a circle, arrange the fruits in the middle of it, and then you fold the edges toward the middle. There is no lattice pattern, no need to decorate, or even using a pie dish, this is much faster and easier. I was very much in the mood for a simple and quick tart, so here it is. I hope you enjoy it as much as I did making this crostata. If you prepare the dough the night before, it comes together in a jiffy.

Old-fashioned Rhubarb Pie

Old-fashioned rhubarb pie! Guys, I am ashamed to say, but this pie was polished within two days and it is only th two of us! If you love rhubarb, this pie is for you. It is a very simple, very plain pie, a buttery pie crust holds together: rhubarb. Yeah, duh, I decided to go for no further adornments, no additional spices, no egg, no custard, no nothing, just loads and loads of rhubarb. It is sweetened with sugar and tapioca starch will serve as the binder, but that’s it. I enjoyed mine with a dollop of whipping cream. Feel free to serve with ice cream or just eat plain!

If you are up for it, below I will show you a very German cheesecake with a delicious rhubarb and strawberry sauce. You wonder what makes a German cheesecake German? We love using quark. I believe you find that in Lidl ind Aldi nowadays also in places outside of Germany. Sour cream, cream cheese, quark, we love the combination of a lot of dairy products.

Fluffy “Kaiserschmarren” with Rhubarb Compote

Fluffiger Kaiserschmarren mit Rhabarberkompott

Have you every heard of “Kaiserschmarren”? This is a giant pancake cut into small pieces, dusted with icing sugar and served with compote. It is very famous in Austria and the south of Germany. Since I recently moved from the north of Germany to the south, to Munich, I felt it was time I gave this traditional recipe another go. There is a whole war going on whether to include raisins or not, but I love the plain version, sorry. However, I decided to serve it with rhubarb compote. Normally you would serve it with a plum compote, but it is spring and I like rhubarb, so why not give this a little spin. So think a pancake cut in neat pieces, dusted with icing sugar and some nice fruit compote on the side and you get this Kaiserschmarren. Sounds good?
