Aged Eggnog

I actually don’t think I have taken pictures of anything this fast. I believe I gave this eggnog three minutes on my balcony. It was about -3 and during the shot it was snowing heavily. But then, when I could get inside and enjoy a nice cup of eggnog, it was all worth it. Eggnpg is a mix of cream and/or milk, alcohol, eggs, and spices.  This eggnog is prepared with raw eggs, so be sure that they are fresh. It is aged over time, thus you will not need to heat anything.  With age it matures in flavor. The original recipe says to start two to weeks prior consumption, so this is the perfect time if you want to enjoy it for Christmas.

Eggnog is the American answer to German Eierlikör. It tastes different, I actually prefer eggnog to Eierlikör. As stated, this recipe does not require you to heat up anything, the eggs are pasteurized with the alcohol and time. The Youtuber Adam actually did some research, if you are scared of salmonella, be sure to ages for a few weeks. Then you will be extra certain that it is safe to consume even for pregnant women. And it does intensify the flavor, so feel free to start now for Christmas.

Aged Eggnog Recipe

Serves: About 1 liter
Prep Time: 20min

This aged eggnog recipe is prepared a few days or weeks in advance and does not require you to heat anything.

Ingredients

  • 240 + 240 grams of heavy cream
  • 240 grams of rum (you can also use other alcohol)
  • 120 grams of whisky
  • 2 fresh eggs
  • 80 grams of regular sugar
  • Nutmeg and cinnamon to your liking

Beat 240 grams of heavy cream until stiff. Measure the whisky and rum into a container, then beat the eggs with the sugar, slowly add the alcohol while constantly beating. Incorporate the unbeaten cream and spices, then shortly beat in the whipping cream. Transfer to a bottler or similar, you need to make sure to add oxygen once in a while. Let sit in the fridge at least for a few days. The eggnog will get better over time, a few weeks helps to intensify the flavor. Serve with additional whipped cream and spices.
