Plum Cinnamon Cupcakes with Maple Cream Frosting

Today I am introducing plum cinnamon cupcakes with maple cream frosting. Just because. The main reason is because I love the mix of plums with cinnamon, there is nothing better than this combo in fall in my opinion.

The second reason is because you loved my simple plum tart with cinnamon streusel so much. No other recipe was clicked more than often in September. Even looking at all blog entries from 2018, it already ranks as No.5. The pictures below show the tart how I made it for my relatives during our holiday in Spain. I barely managed to take pictures, that’s how quickly it disappeared. I just love the fact that it is so versatile, I made it in a springform pan as there was no other option. Works just as well.

Sachertorte, Austria’s most famous Chocolate Cake

There hasn’t been enough chocolate on this blog yet. So Sachertorte it is! Ever heard of this delicious chocolate cake? It was invented in Austria and it has all the good stuff, lots of butter, lots of eggs (10 in total!), and chocolate, of course. Don’t bore me with cocoa, no, let’s go straight to chocolate. And with these delicious ingredients you make light and fluffy chocolate sponge cake. And to keep it all together, you use apricot jam as the glue. I just love it.

SachertorteI actually had the chance to eat it in Austria. Originally the cake comes from Vienna, I did have the chance to eat it in Vienna, but, gasp, didn’t like it that much. The one I really enjoyed a lot was in Salzburg, the town Mozart is from. Below picture was one of the first pictures I took with my current camera, the Sony Nex7. If you would like to learn more about food photography, please check these blog posts. I looks great, doesn’t it? Austria is busy exporting its Sachertorte. I can’t blame them for doing that. Because yes, you want to dig into this super rich cake, believe me! What I like best about this rich chocolate cake is that you can actually export it because it gets better over time. Pumpkin roll with apple buttercream? Pumpkin doesn’t play a very important role in baking here in Germany. At least until recently. No, we have not yet discovered its use for cheesecake and the like.

Can I confess something? I have never been a big fan of pumpkin pie. I know, kill me know. But I just don’t like the flavor that much. I have tried my share of pumpkin pies, but still. That’s why I have ignored pumpkin mainly in baking.

But then I met my hubby and hubby is a big fan of pumpkin pie. So I started looking for good recipes. This recipe is currently his favorite. If you like pumpkin pie, try it, it is great. But as stated, I didn’t get excited. Because I don’t like such a dominant pumpkin flavor.

Uruguay’s Version of a Peach Layer Cake (postre chajá)

It’s time for a peach layer cake, one from my country of origin Uruguay. This cake was actually invented in my home town Paysandú. Postre chajá is a peach layer cake that is named after a bird called chajá (in English it is called southern screamer, the Spanish tries to imitate the loud screams it produces). Below you see a picture of this bird. Why the cake got this name and why it is extremely delicious, I will explain in this blog entry.

Chocolate Layer Cake with Berries or Farewell to Summer

I believe it is time to say goodbye to summer. At least here in the north of Germany you can tell, the nights are getting chilly and the days are definitely getting shorter. For that reason I decided to celebrate the change of season with a chocolate layer cake with lots of berries. Mind you, the strawberries are not imported, but actually from Germany. But regardless of what type of berries you have at hand, I am sure you will love this cake. Just make sure you find some tart berries and you will be good to go. The sweetness of the chocolate combines nicely with the brries, believe me.

Guys, this blueberry sponge roll is my new summer favorite. Really. Hamburg has decided to participate in summer this year. Whereas last year summer was on a Tuesday, we have had very nice and sunny weather since May, that’s already three months and it doesn’t look like it is going to change soon. So finally I also got into the “It’s too hot, I don’t want to turn on the oven” mode. I decided I needed something light and fluffy. With fruits preferably. Simple, yet elegant.

Happy to present lavender cupcakes today. It has been way too long that I presented cupcakes. During these one and a half years I have only shown you guys three recipes, that’s crazy, three only! And since lavender has been on my bucket list forever, I decided to give it a shot this time. Lavender either in a cake or in a cupcake, that was my idea. So I used a basic vanilla cupcake recipe and added some lavender to it. Replaced some of the sugar with honey and added blueberries to the buttercream. May I present to you a summer symphony of lavender, honey, vanilla, and blueberries?

Have you ever heard of the Eton College in UK, the famous boarding school for boys? They happen to have invented a dessert, traditionally consisting of strawberries, whipped cream, and broken up meringue. It’s called Eton Mess. It is commonly served during the annual cricket match agains Harrow School. I looked it up, this year they are playing today, June 23rd. Instead of only serving strawberries, whipped cream and broken up meringue, I decided to go with a cake version, hence Eton Mess Cake.
