Today I am introducing you to mango mini cakes, which do not require any baking. I am also presenting these mango mini cakes to you as I am organizing the blog event “Colorful Food”. Strawberry pancakes with strawberry sauce! I wanted to start my blog event with the strong color RED and with my favorite meal of the day: BREAKFAST! In fact, I have made this recipe for Saturday breakfast so many times already, I don’t know why I haven’t posted it yet. It is so good, the key words are light, airy, fluffy, and with a strong strawberry flavor, batter as well as sauce. Because, of course, I also added strawberries to the pancake batter, not only the strawberry sauce, which is full of pureed strawberries, some lemon and a bit of sugar.

I am excited to say that tommorow a new blog event gets started! Spring is here and finally all things fresh and bright are popping up. I want to encourage you to get some color into your food so therefore I am organizing the blog event “Colorful Food”! The basic idea is that you pick one rainbow color (red, orange, yellow, green, blue, purple, or pink) and create a dish with it. The color has to come from the ingredients themselves, no artificial food coloring allowed. On top of that I present a fruit pizza here with all rainbow colors, because how else can you celebrate this event? For the recipe, please scroll down.
Are you interested in taking part? This is what you have to do:
- From May 1, 2018 until June 30, 2018 you have to create a recipe/dish in one rainbow color (yes, you have to color-code this time, your recipe should only be in one main color), no artificial food coloring allowed, only natural coloring. The recipe can be anything, ranging from sweet, savory, drink, dessert or main dish as long as it is in one color. Please don’t use posts from your archive, but only newly created ones.
- Post the recipe with at least one picture on your blog, come back here, leave your blog post via inlinkz (scroll down) and have a look what the others created.
OK, I have to say something heretical. The letter or number cakes as you can see here have disappointed me. Yes, you read right. I expected something as good as my beloved sponge roll with strawberry cream, at least if you make the cakes with sponge cake. The strawberry cream is a dream come true with a fluffy and light sponge cake. It has this light feeling to it, I expected this light feeling when I took my first bite from below letter cakes. And then I was disappointed. As I made rather narrow letters, the dough tasted crunchy, gooey, just not good. Even though I was happy about the additional fresh fruits, the better ratio of cream versus sponge cake, I was not happy. I wanted my favorite roll! I was depressed.
I promised that during my second year of blogging I would introduce more cookies to my readers. So here goes: Blueberry Muffin Cookies for the official first day of spring! This cookie is a mix between a muffin top and a cookie. I love the fact that it has fresh fruit in it, cookies + fresh fruit and you have me interested. This is literally like eating the top of a muffin, so good!

That’s because Lizet lives in Paraguay even though she is Bolivian and therefore has a lot of Latin American recipes on her blog Chipa by the Dozen (chipa are a type of cheese bread I am determined to also share on my blog in the future). I also feel that the treat she brought has an interesting Latin American twist, but let’s give the floor to her.
Have I ever mentioned that I love desserts that sound complicated, but are easy to prepare? This one is most certainly one of them. Welcome to Pineapple Mini Cakes with Mascarpone Cream, so delicious, yet fairly easy to whip up.
It was so much fun making these Blueberry Hand Pies. In fact, I was wondering why I didn’t make them before. While sipping my cappuccino my beloved husband made for me and eating a hand pie as a second breakfast, I really thought something was wrong with me. They are perfect to take along as they fit into any plastic box (no hassle dragging them along), they can be prepared in advance, and they are so small that many can share. On top, they simply are cute to look at and they can be frozen easily.
We had so many limes at home. So what to do with them? Smoothies? Cocktails? I decided to go with a no-bake cheesecake. With lots of lime flavor. I am really proud because I invented this recipe. Normally I like to follow recipes. It is nice to simply follow instructions, one step at a time. It is very relaxing. At least for me baking is really relaxing. That’s why I am so proud that I invented this cake. A creamy cheesecake with a nice tangy lime flavor. Trust me, you will taste the lime.
I think I have mentioned that Germans aren’t that much into cookies. Especially not in summer. But when I brought these Summer Lemon Cookies to work the other day, they were gone within minutes. Even I was a little surprised. Maybe it was because they are full of lemon flavor and you can definitely taste the cream cheese. Since they are rolled in sugar before baking, they have a nice crunchy touch, but are soft in the center. I don’t know. But what I do know is that these cookies are really easy to prepare and do NOT need to sit in the fridge to develop their flavor. You can whip them up in about 20 minutes from start to finish.
Even if it is hot, I promise you, your oven won’t be turned on for too long. So yes, go ahead and makes these delicious friends!

Preheat oven to 180 degrees Celsius and line two baking sheets with parchment paper. Whisk the flour, baking soda, cornstarch and salt in a medium-size bowl. Set aside. Pour about 50 grams of regular sugar in a small container. Set aside. Cream the butter and cream cheese in a large bowl with a mixer for about two minutes, then add 100 grams of sugar and mix one more minute. Add the egg, lemon juice, lemon zest and vanilla extract. Add the dry ingredients to the wet ingredients and either mix on low or using a wooden spoon until combined. Roll balls of dough in the size of a walnut and roll in prepared sugar afterwards. Place on baking sheet lined with parchment paper. Cookies will flatten out slightly. Gently press down each cookie with the bottom part of a glass. Bake the cookies for 10 to 11 minutes, or until very lightly browned on the edges. Let cool on baking sheets for a few minutes before transferring to a cooling rack. Cookies can be kept in an air-tight container for a few days.Summer Lemon Cookies
