Chocolate chip cookies with a nice nutty flavor, coming from tahini, that’s what you will get today! I am excited to present the third vegan recipe in January. If you would like to know why I am doing a vegan January, please check out my previous post. In my opinion, chocolate chip cookies are the best thing in the world, they are souldfood, a simple dessert, easy to prepare, they make children happy as well as adults. Regardless if filled with caramel, plain, with brown butter, I have quite a few recipes on my blog, even including a chocolate chip cookie cake, that’s how much I love this flavor. I have been wanting to try chocolate chip cookies with tahini for a while now and finally managed to give it a try. I love the vegan version, even my husband gobbled up the cookies happily and gave his stamp of approval. These vegan cookies contain tahini, the sesame paste as a replacement for the egg. Vegan Cinnamon Toast Crunch

Today I am introducing the second vegan recipe in January. I personally am a huge breakfast person. For that reason I am offering homemade and also vegan cinnamon toast crunch for you. Yes, they do contain less sugar than the original (I decided to go with maple syrup for the dough) and they are vegan as I opted for coconut oil instead of butter. When I took pictures of this cinnamon toast crunch, I was reminiscing my childhood. I believe everybody has a favorite cereal from old times. I was all into the ones with nougat or nutella (not so sure there are such varieties in the U.S.) and I also loved anything with cinnamon like cinnamon toast crunch. I remember eating them without any milk, simply snacking whenever I felt hungry. If you keep them in an airtight container, they will stay crunchy for a long time.

Did you have a wonderful New Year’s Eve? Did you make any New Year’s resolutions? I am somebody who usually doesn’t start with many ambitious resolutions. In my opinion it does not take long for those ambitious dreams to crash, the very latest in February. They don’t last very long. However, this year I decided to eat a bit healthier during January. Especially after the very decadent December it feels good. For that reason the recipes of January 2022 are going to be healthier. I am saying “healthier” as “healthy” is too strong of a word and also depends on what you consider this to be. I am going to post only vegan recipes in January. They are still going to be sweet and some people consider sugar to be bad. It has gotten a pretty bad reputation. I will start with the German mole cake as pictured.

Delicious No-Bake Strawberry Cake

It’s summer! Officially! So I need something fast, something refreshing and also something healthy. That’s why I invented this frozen strawberry cake, which can be done in less than 15 minutes. It is pleasing to the eye and everybody will love it, I promise. It may be one of your new go-to recipes. I at least have it stored as a new favorite. I honestly was surprised. I usually don’t invent cakes. I like to change recipes to me liking, I like to alter them. But start one from scratch? I don’t know what happened, but for some reason I just felt like throwing some strawberries together and hope for the best. I usually don’t mind following a recipe, but this time it was just an impluse reaction, why not mix strawberries with some crunchy almonds? I took quite a risk there, because this cake was a birthday cake for a friend of mine. And since he likes strawberries and since it is summer, I came up with this beauty.

Authentic Mexican Tacos and Tacos al Pastor

Guys, can you believe it, I do have a full category with all Latin American recipes on this blog, but so far not a single Mexican recipe. That’s a shame, because the Mexican cuisine has so much to offer. My favorite Mexican food is tacos and for that reason we are going to make tacos from scratch, the whole thing. Because tacos are super basic, you need three ingredients: cornmeal, salt, and water. So for that reason tacos are gluten-free and also vegan. As always you will find a lot of tips below for your tacos to be successful from the start.

Tacos are as important in Mexico as are arepas in Colombia and Venezuela. However, true Mexican tacos are never “hard shell” as often suggested by the chain Taco Bell, tacos are eaten with your hands and are soft and flexible, they are a small tortilla after all. For that reason you will see them all flat on my pictures, this is how I learned to eat tacos from Mexicans. You only bend them in your hands. Tacos are usually made with cornmeal and not flour. As far as I know flour tacos are only known in the north of Mexico, but the rest of the country uses corn. Tacos are super popular in Mexico and are usually served with some spicy salsa or sauce. But now let’s get started.

Healthy Ginger Muffins with no Refined Sugar

It has been four years since I put these ginger muffins on the blog the first time. Partially they are made with whole wheat flour, the traditional butter is replaced with coconut fat and we will not use any refined sugar, but instead sweeten them with molasses. Since they contain feshly grinded ginger, they are super moist and delicious. Of course you can argue if this really is “healthy”, but at least they are healthier than your average muffin. At least I didn’t feel guilty eating them happily with some joghurt and more molasses for breakfast.

Finally I am introducing the basic recipe for arepas on my blog! Arepas are a flatbread made from cornmeal. They are most popular in Colombia and Venezuela. As a German I have to say that these countries offer the same kind of varieties of arepas as breads are offered here. I already introduced arepas boyacenses, however, so far the basic recipe was missing. The reason being simple, I just felt I still didn’t know how to make perfect arepas even though it only consists of three ingredients, cornmeal, water, and salt. But now the waiting is finally over, below I am offering many tips. Hopefully they will make you confident enough so that your first arepas turn out great from the start. If making the very basic recipe, arepas are naturally gluten-free and vegan.

What did you say? Sourdough in brownies? Seriously??? Yes, this was my reaction as soon as I saw a recipe calling for sourdough in brownies on the Internet. Why do you need to add sourdough to brownies, that sounds so strange! I have been pondering that ever since and it is slowly making more sense. If you think about it, sourdough is basically fermented flour, which is much easier to digest than regular flour. IDuring Corona times it looks like everybody was making bread and I had heard of people lamenting the fact that they had to discard so much sourdough, so why not use instead? After a while I was sold and thought, if the sourdough is a little old and may smell just a little like alcohol, even better, I definitely wanted to give these brownies a try!
