Simple and Delicious Strawberry Shortcakes

I recently moved from the north of Germany from Hamburg to the south to Munich and I am impatiently waiting for spring to finally start. It is the end of March almost and I found snowdrops and crocus flowering, not really spring yet if the heralds of spring are only blossoming. The daffodils still need more time. Just this fact made me realize that winters are definitely milder in Hamburg. The nights simply are not as cold and the change in temperature is not as drastic. I mean, I took the picture with the snowdrops you see below in mid-March. Don’t think that would be possible in Hamburg. But regardless if spring is here, we can invite spring to our plate, can’t we? At least I wanted to do that by preparing these simple and delicious strawberry shortcakes. I love the fact that it really doesn’t take a lot of time to make them. Served with whipped cream and some fresh strawberries, let’s have this beautiful dessert!

Schneeglöckchen in MünchenShortcake originates from the UK and was already served in the Middle Ages. It is similar to shortbread as you also make crumbs from flour, sugar, and butter. But here you add buttermilk, not water or an egg, the buttermilk makes this shortcake nice and fluffy. Shortcake is a rather plain type of cake, not really sweet, but that’s when the fruit and the whipping cream come in, shortcake is the perfect companion to fresh strawberries and some sweetened whipping cream!

Refreshing Lime Bars

Is it already spring in your region? I currently live in Munich, in the south of Germany and just a few days ago we had heavy snowfall. Today the sun is shining brightly but it is brisk and cold outside. I feel that the snowdrops and crocus are all confused as to whether spring is actually around the corner or not. But be it as it may, I decided to introduce some refreshing lime bars, which are definitely going to bring spring to your plate. I love the fact that they are super easy to prepare, you don’t need a lot of ingredients and that you can serve them for Easter, brunch or anything that needs to be brigthened by some fresh yellow color. Also, these will intensify in flavor on day 2 or 3, so perfect if you want to make them in advance.

Erfrischende Limetten-SchnittchenI decided I needed a super simple and quick recipe. There have been too many complicated ones recently. We simply don’t have time to be in the kitchen for so long, especially if it is supposedly made from scratch. How about these delicious lime bars? You can also make them with lemon or any other citric fruit. I love them with lime. The shortcrust is not prepared the regular way with cold butter, but don’t despair, melting the butter is actually what makes this so easy to prepare. And the lime curd is also done in a jiffy, you basically whisk together all ingredients and that’s it. Let the oven do the hard work.

I want spring! How about you? Can I interested you in a bluberry lemon cupcake with lemon frosting? I can assure you, with this cupcake you will invite the colors and scent of spring onto your plate. These lemon cupcakes are moist, tart, and have blueberries as an extra bonus. You can omit the blueberries, but I just love the combination of lemon with blueberries. The frosting is prepared with cream cheese and flavored with lemon zest and lemon juice. This cupcake is perfect for any occasion, be it for a birthday, coffee invte, or for Sunday guests. They can be prepared beforehand, but also don’t take that much time to prepare fresh.

Blog Birthday Coming Up and a Delicious Chocolate Strawberry Cake

In exactly one week, on February 15th my blog will turn two. For this reason I decided to prepare a delicious chocolate strawberry cake. It is a very festive cake, so I think it would fit also on Valentine’s Day or later Mother’s Day.

Erdbeer-Schokotorte When I started blogging about two years ago, my first blog post was French lemon tarts. I started blogging to be sure to have all the recipes I liked in one place. You know, not frantically looking for a little piece of paper, checking whether I had received a recipe on a napkin and the like. I also liked the fact that I could simply forward a link to my friends and family if they requested for me to pass on a recipe. So much easier than having to write it down in some form. Yes, I do bake with my blog, I usually have my cell phone close by.

Strawberry Mojito Cocktail

I wanted a strawberry mojito cocktail. I asked for this cocktail when I picked strawberries with my husband. I really love picking strawberries, there is nothing nicer than to pick them from the field straight into your mouth. I am married to a Colombian, so strawberry picking was something he had never done. I requested we go and even though we live in a big city in Germany, the next strawberry field was surprisingly close. Nothing comes close to plicking fruits and enjoying them right there and then.

Well, and then we had tons of strawberries. I have already some strawberry recipes on this blog. For example this strawberry rhubarb waffle cake, strawberry sponge roll, or this no bake strawberry cake, this strawberry chocolate cake, or these fluffy strawberry pancakes for breakfast. But I wanted something else. I wanted to celebrate. Celebrate that I am fully recovered after my horrible bike accident. For that reason we had a giant cookie monster cake a few days ago. But I wanted to celebrate with a drink. I love mojitos and I love strawberry mojitos. So I asked my husband to make me a strawberry mojito. One with fresh strawberries.

Elderflower and Lemon Wedding Cake, celebrating with Meghan and Harry

Ok, so this elderflower and lemon wedding cake is completely spur-of-the moment and unlike me. I am usually not that girly type of girl, sorry, you know, like pink, sprinkles, princess, etc. But somehow when I watched Meghan and Harry getting married, I was touched. And I felt like making their weddding cake, a very small version of course. Especially since elderflowers are finally blossoming here in the north of Germany. We seem to always be lagging behind, whereas in London apparently they are in full blossom, they are only starting here. So I decided to make my own elderflower syrup and give this wedding cake a go.

elderflower and lemon wedding cakeMind you, this is my very first three-tier cake and no, it is not the original recipe, I deviate in many aspects. It is simply a wedding cake inspired by Meghan’s and Harry’s wedding cake and since the top tier actually was baked in a muffin tin, you can probably imagine it to only feed about 12 people or so. The bottom cake is a 24cm (9inch) cake tin, the top  is only a cupcake. A mini version, yet a celebration of these flavors nonetheless. Elderflower and lemon, sweet versus tart, white and yellow happily married in this symphony of spring.

Rainbow Color Green: Kiwi Cream Cheese Cake

Today I am introducing you to a kiwi cream cheese cake with a chocolate crust as sheet cake. We actually ate this cake with some friends on a wonderful sunny weekend in Hamburg and it was the perfect cake to take along to eat outside, picnic style. This is a no fuss cake, easily transportable, you can cut it and eat it without any silverware.

Rainbow Color Yellow: Lemon Soufflé inside Lemons

Nothing tastes better on a hot day than a refreshing lemon soufflé. If you want to get all fancy like me, you can also serve the soufflé inside a lemon. It gives this dish its extra tangy flavor and will definitely be a crowd-stopper.
