Due to the request of my hubby today you will get creamy passion fruit ice cream. It is made with a custard, which contains egg yolks, cream, and milk. You will need an ice cream machine for this ice cream. You will be rewarded an extremely refreshing ice cream with a distinct passion fruit flavor. We have made it several times this summer. Even though I don’t like ice cream too much (I know, I am weird), I have to say, this one is different. Even I ate my fair share of it. So if you have an ice cream machine and want to make ice cream the classic way, let’s get going, this is so delicious!
If you are short on time and can’t make the traditional German Zwetschgendatschi with yeast dough, you may want to try this version. Instead of yeast, we are going to work with baking powder as the leavener. The base is a sort of cream cheese/sour cream type of dough relying on oil instead of butter. It comes together in minutes and can immediately be baked. No rising times, no waiting. I like my fruit cakes with lots and lots of crumbs on top. These have some silvered almonds included. However, you may omit the crumbs or streusel completely or make the simple version with flour, butter, and sugar. I provide the recipe for a half-sheet cake below. If you want to have a full sheet, simply double all amounts.

Apricot strudel, I just had to make one! Since attending an online strudel class, I have been in a strudel craze. I published one full article on how to stretch out strudel dough not long ago. I loosely based it on the recipe from Alfons Schuhbeck (in German). he is very famous, especially for this plum cake called Zwetschgendatschi, so I am happy to present this plum cake with yeast dough, lots of plums, and cinnamon crumbs. I am introducing an unusual recipe today, homemade tomato pesto, red pesto or pesto rosso made with fresh tomatoes. Reason for this being that I was gifted a lot of self-grown tomatoes. Quite a variety, some big, some small, many yellow and one even purple. The many yellow tomatoes are the reason that the pesto has a slightly lighter color. But regardless of the color, man, my hubby and me devoured this pesto. First we used it as a dip for crackers, then I made a tomato tart and of course we had to have pasta with it. It was gone so quickly, I had to made fresh one. Thank God we got a large batch of tomatoes.
Today I have a simple and easy plum coffee cake for you. You don’t have to wait for yeast dough like for this Bavarian plum cake called Zwetschgendatschi or have to chill dough like for this plum tart. This is a dough you can put into the cake fom right away. I believe you will need less than 30 minutes until the oven takes over and you can relax. The cake also has a wonderful almond crust, which is mixed together in minutes and which gives this cake some extra points. A simple, yet delicious coffee cake you can carry to a picnic or which you get bring to a pot luck, can I interest you in it?

I had a lot of blueberries, some raspberries, and blackberries. You may also use strawberries, or, if you want to go crazy, even cherries. The trick for a proper set filling is here that you cook half of the berries first with some cornstarch and then add the fresh berries for additional texture.
