Yay, I finally found a pumpkin pie recipe I like and I am happy to publish it here. I don’t know if you are going to kill me, but I made it with butternut squash. Somehow this is classified as a pumpkin in Germany. I decided to roast the squash in the oven. This gives it extra flavor and makes it so much easier to work with. I like butternut squash much better than hokkaido pumpkin, which is basically the main pumpkin here in Germany used for cooking and baking. I find the flavor milder, nuttier, and with a touch of caramel. I also like the fact that the color is so much brighter. It makes it more fun to take pictures of the pie. So finally I got to introduce the traditional pumpkin pie here on my blog!

Today I have pumpkin cookies with browned butter for you. At least here in Germany pumpkin is normally only used in savory dishes, which is a pity! So I am following the North American tradition of using all things pumpkin in sweets and the like. I already have a few pumpkin cookies on the blog, so I will add this one to my small list. What I like about these is that you do not need to chill them and if you have canned pumpkin at hand, these are really easy to make. The only extra step is browning the butter, which will give a nutty and caramelized extra flavor. The icing also contains browned butter, so how about you try these?
Does this pumpkin mousse caramel cake count as cream cheese cake? I don’t believe so as it definitely tastes more like mousse than anything and you may even serve it as an icebox cake. But be it as it may, I find this cake delicious, if you like pumpkin and caramel, this cake is for you. We will use a Biscoff cookie crust and these already give a nice crunchy and caramel flavor. The filling contains a lot of pumkin and then we are going to top if all off with additional caramel.
Guys, it is a shame I haven’t posted any cookie recipe in a while! This needs to be rectified immediately. Especially since I am a huge cookie monster. Moist and delicious pumpkin layer cake with a buttercream that actually contains brown butter and cream cheese, that’s what I am introducing today. Reason for introducing this cake here ist two-fold. Reason #1 has to do with a German blog event I hosted. It had all to do with pumpkin recipes. For that reason I made these delicious pumpkin cookies with cream cheese frosting and also this vegan pumpkin pasta with only two ingredients.
Guys, I find it amazing how easy it is to make this two-ingredient vegan pumpkin pasta! Seriously, even if you are not into making your own pasta, I can definitely recommend making this one. You don’t even need a pasta machine, the dough can be rolled out by hand with a rolling pin, cut it into long stripes, and voila, you’ve got yourself delicious tagliatelle! I tried both options, tagliatelle by hand and also using the pasta machine to make spaghetti, both work wonderfully. As stated, this is vegan pumpkin pasta as it only contains pumpkin puree and all-purpose flour as its two ingredients. I find that so awesome!

This is a cake-like pumpkin cookie that is very soft and has a not too sweet cream cheese frosting serving as a nice contrast. You may not think much about it, but here in Germany pumpkin is usually not served in sweet goods, you will find tons of savory recipes, but sweet ones not so much. I sometimes wonder why. There is a reason why pumpkin is very popular in North America in any baked goods, it has a sweet kind of flavor and carries a lot of fall flavor, makes sense to me. So let’s give these cookies a try!
Have you ever eaten pumpkin waffles? I hadn’t, I know, shame on me. But this year I somehow got into the pumpkin haze. So I cecked out Pinterest and found a lot of different recipes. Finally I encountered the recipe below and bam, I was hooked. These pumpkin waffles are super fluffy, I love that they are crispy on the outside, soft on the inside and tall and thick. I think they can be served either for breakfast, but also as a nice dessert.
I made cute pumpkin cookies in pumpkin shape! Reason was for Pinterest apparently telling me to make pumpkin cookies, all I saw was something pumpkin. So I obeyed and thought, why not make some pumpkin sugar cookies? For this I turned to my favorite sugar cookie recipe. Because, you know, IF you make a cookie shaped like a pumpkin, it sure should contain pumpkin. At least in my opinion. And then I also wanted some fall spices, like cinnamon, cloves, ginger, and nutmeg. So I threw in this spice mix. It actually is very similar to the one of my beloved pumpkin spice latte. And in the end I got these cute little cookies.
