Have I mentioned that my hubby is a huge fan of citrus fruits? I will admit, I don’t mind them either. It probably comes as no surprise then that I have tons of recipes on my blog with a citrus touch. I love any fresh and yellow, especially in winter. I also don’t mind the vitamins (yeah, I know, we are still talking about cake). I learned not that long ago that lemons, limes and the like are usually harvested in winter, sometimes in January or February. Refreshing Mojito Cupcakes

Guys, finally I can introduce some cupcakes to you that taste even better on day 2 or even 3. Once the cupcakes had the chance to fully develop their flavor, you will taste the lime much more, the rum is going to still be present, but more so in the back. If you are waiting for spring to finally come, how about making these mojito cupcakes? I often find March to be a though month, I am tired of the snow, I want to have more green, some refreshing ingredients, I am longing for more ease, for the birds to chirp and simply for spring. (Key) Lime Pie

Amerikanischer Key Lime Pie

Today we have American (key) lime pie. This pie is traditionally from Floriday and hence uses the limes from the keys in Florida. Key limes are smaller and sweeter in flavor than regular limes. However, since I am located in Germany and can’t get hold of key limes, we are going to use regular limes for this lime pie. I personally love serving a citrus dish in winter. I love this tart and refreshing flavor on a winter day. You don’t even need to make whipping cream, you can also enjoy this pie in its very pure and simple form. I like it best on day 3.

Refreshing Lime Bars

Is it already spring in your region? I currently live in Munich, in the south of Germany and just a few days ago we had heavy snowfall. Today the sun is shining brightly but it is brisk and cold outside. I feel that the snowdrops and crocus are all confused as to whether spring is actually around the corner or not. But be it as it may, I decided to introduce some refreshing lime bars, which are definitely going to bring spring to your plate. I love the fact that they are super easy to prepare, you don’t need a lot of ingredients and that you can serve them for Easter, brunch or anything that needs to be brigthened by some fresh yellow color. Also, these will intensify in flavor on day 2 or 3, so perfect if you want to make them in advance.

Erfrischende Limetten-SchnittchenI decided I needed a super simple and quick recipe. There have been too many complicated ones recently. We simply don’t have time to be in the kitchen for so long, especially if it is supposedly made from scratch. How about these delicious lime bars? You can also make them with lemon or any other citric fruit. I love them with lime. The shortcrust is not prepared the regular way with cold butter, but don’t despair, melting the butter is actually what makes this so easy to prepare. And the lime curd is also done in a jiffy, you basically whisk together all ingredients and that’s it. Let the oven do the hard work.

No-bake Lime Cheesecake

Lime Cheesecake

We had so many limes at home. So what to do with them? Smoothies? Cocktails? I decided to go with a no-bake cheesecake. With lots of lime flavor. I am really proud because I invented this recipe. Normally I like to follow recipes. It is nice to simply follow instructions, one step at a time. It is very relaxing. At least for me baking is really relaxing. That’s why I am so proud that I invented this cake. A creamy cheesecake with a nice tangy lime flavor. Trust me, you will taste the lime.
