Recipe No. 2: German Heavenly Cake with Plums

In case you didn’t know, I love plums. I think it shows on my blog, I have plum strudel, broken-up pancakes with plum compote, or the super popular plum cake with yeast dough available. It probably comes as no surprise that I also wanted to make the German heavenly cake with plums as my second recipe in the small series of plum recipes. I already have a version with raspberries and another with rhubarb on the blog, so now I wanted to add one with plums. Think of a simple batter prepared only with egg yolks, the egg whites are beaten into meringue. You then fill the cake with a plum compote and whipped cream and then you have this delicious German heavenly cake with plums, yum!

Quick and Easy Plum Cake

If you are short on time and can’t make the traditional German Zwetschgendatschi with yeast dough, you may want to try this version. Instead of yeast, we are going to work with baking powder as the leavener. The base is a sort of cream cheese/sour cream type of dough relying on oil instead of butter. It comes together in minutes and can immediately be baked. No rising times, no waiting. I like my fruit cakes with lots and lots of crumbs on top. These have some silvered almonds included. However, you may omit the crumbs or streusel completely or make the simple version with flour, butter, and sugar. I provide the recipe for a half-sheet cake below. If you want to have a full sheet, simply double all amounts.

Bavarian Plum Dumplings (Zwetschgenknödel)

Servus! Since the Oktoberfest 2024 is around the corner, I wanted to introduce you to another classic from Bavaria, Zwetschgenknödel, which translates as plum dumpling. You will realize that during the Oktoberfest a lot of desserts and pastries are sold and super popular, another typical one is the broken-up pancake called  Kaiserschmarrn, a twin of the recipe from today is made with apricots  and thus would translate as apricot dumplings. So far I have only made these famous dumplings with cream cheese or sour cream, but the real deal is actually made with cooked potatoes. So far I have refrained from it as it can be pretty finicky. It tends to be rather sticky and hard to work with. But below I offer some tricks so that you can enjoy this wonderful Bavarian classic.

Plum Cake with Yeast Dough

You probably know that it is only my hubby and me so I thought making a full baking sheet of cake would probably be too much. I already have a plum sheet cake on here. So I figured I would make more of a coffee cake in a round form. This would probably not take as long to eat. So I got to working on it and once done, it took very little and suddenly I only saw half of the cake left. Where had it gone? My hubby looked all innocent, he claimed he had only eaten three pieces of cake. If these these pieces were very large chunks of cake I inquired. Well, this depends on how you define “chunck”. Well, well, well… I think it speaks for itself that hubby was so excited about this recipe. I loosely based it on the recipe from Alfons Schuhbeck (in German). he is very famous, especially for this plum cake called Zwetschgendatschi, so I am happy to present this plum cake with yeast dough, lots of plums, and cinnamon crumbs. If you are short on time, I can recommend a much quicker plum cake, which uses baking powder as the leavener instead of yeast.

Plum Tiramisu

Today we have plum tiramisu with no alcohol or raw egg. Do you think I am in a plum craze? You bet! But to my defense, you seem to be, too. Currently the 9 recipes with plums, the plum tart with cinnamon crumbs as well as kaiserschmarrn or broken-up pancakes with plum compote, these three articles are currently on very high demand and are clicked on by the thousands. So I figured, apparently I am not the only one who loves this stone fruit. And since this time I was lazy and decided to buy ladyfingers, I promise you, this is a super delicious dessert you can impress with anyone and serve to guests.

My Favorite Kaiserschmarrn – Broken-up Pancakes with Plum Compote

Kaiserschmarrn with Zwetschgenröster aka broken-up pancake from Austria with plum compote, wow, you asked on Instagram unanimously that I publish the recipe, what a surprise! So your wish is my command, let me introduce you to this recipe, which I happen to make about every other week. My husband and me enjoy this for a weekend breakfast, but I also often make it to introduce guests to German/Austrian cuisine. I probably could be woken up at 3 in the morning and I would manage to produce kaiserschmarrn without a problem and from memory. You need to separate eggs? Not a problem. You don’t have a kitchen scale at hand? I will somehow figure it out. Once I even beat the egg whites by hand with a fork, you do need quite a bit of arm muscle, but it worked. Kaiserschmarrn is something everybody loves and can be practically served any time of the day, as a main dish, as dessert, for breakfast, you name it. This is the most traditional version of kaiserschmarrn. My husband and me agree that it is particularly good with plum compote. So let’s get to work and make some classic recipe!
