I want spring! How about you? Can I interested you in a bluberry lemon cupcake with lemon frosting? I can assure you, with this cupcake you will invite the colors and scent of spring onto your plate. These lemon cupcakes are moist, tart, and have blueberries as an extra bonus. You can omit the blueberries, but I just love the combination of lemon with blueberries. The frosting is prepared with cream cheese and flavored with lemon zest and lemon juice. This cupcake is perfect for any occasion, be it for a birthday, coffee invte, or for Sunday guests. They can be prepared beforehand, but also don’t take that much time to prepare fresh.
I can’t believe that 2018 is almost over, so many things happened! I distinctly remember my bike accident I had in April. It included hemorrhage, hospitalization and a long road to recovery. I am extremely grateful that I have fully recovered and don’t have any permanent damage. For this really is a miracle. For that reason we had to celebrate here on the blog, we made a gigantic cookie with a cookie monster on top, you will find the recipe here. Or the fact that we are actually moving back to Munich from Hamburg. I am not from Munich originally, but happened to live there for three years some time ago. I am excited to be moving back and see what 2019 will have in store.
Ok, so this elderflower and lemon wedding cake is completely spur-of-the moment and unlike me. I am usually not that girly type of girl, sorry, you know, like pink, sprinkles, princess, etc. But somehow when I watched Meghan and Harry getting married, I was touched. And I felt like making their weddding cake, a very small version of course. Especially since elderflowers are finally blossoming here in the north of Germany. We seem to always be lagging behind, whereas in London apparently they are in full blossom, they are only starting here. So I decided to make my own elderflower syrup and give this wedding cake a go.
Mind you, this is my very first three-tier cake and no, it is not the original recipe, I deviate in many aspects. It is simply a wedding cake inspired by Meghan’s and Harry’s wedding cake and since the top tier actually was baked in a muffin tin, you can probably imagine it to only feed about 12 people or so. The bottom cake is a 24cm (9inch) cake tin, the top is only a cupcake. A mini version, yet a celebration of these flavors nonetheless. Elderflower and lemon, sweet versus tart, white and yellow happily married in this symphony of spring.
Nothing tastes better on a hot day than a refreshing lemon soufflé. If you want to get all fancy like me, you can also serve the soufflé inside a lemon. It gives this dish its extra tangy flavor and will definitely be a crowd-stopper.

Apparently I am into lemon flavor. This is not the first lemon recipe I have posted here. If you love anything with lemon, be sure to check out the recipes at the end of this post, it includes double lemon cupcakes, pavlova with lemon curd, the classic lemon tartelette from France and other treats. Well, maybe I should clarify, I love lemon flavor, but my husband is obsessed with it. So that’s why I decided to go with yet another lemon recipe: Lemon Meringue Pie!
This year for Easter I decided to prepare something dreamy and airy. What better option than to go with pavlova? I went for a pavlova with lemon curd and fresh fruits. Never heard of pavlova? According to my research this dish is seen as the national dish of either Australia or New Zealand, both countries are still fighting about that. In the 1920’s the Russian ballerina Anna Pavlova visited both countries and this dish was invented in her honor. It contains a meringue base, which usually has the shape of a nest and is filled with whipped cream and fresh fruits.
I think I have mentioned that Germans aren’t that much into cookies. Especially not in summer. But when I brought these Summer Lemon Cookies to work the other day, they were gone within minutes. Even I was a little surprised. Maybe it was because they are full of lemon flavor and you can definitely taste the cream cheese. Since they are rolled in sugar before baking, they have a nice crunchy touch, but are soft in the center. I don’t know. But what I do know is that these cookies are really easy to prepare and do NOT need to sit in the fridge to develop their flavor. You can whip them up in about 20 minutes from start to finish.
Even if it is hot, I promise you, your oven won’t be turned on for too long. So yes, go ahead and makes these delicious friends!

Preheat oven to 180 degrees Celsius and line two baking sheets with parchment paper. Whisk the flour, baking soda, cornstarch and salt in a medium-size bowl. Set aside. Pour about 50 grams of regular sugar in a small container. Set aside. Cream the butter and cream cheese in a large bowl with a mixer for about two minutes, then add 100 grams of sugar and mix one more minute. Add the egg, lemon juice, lemon zest and vanilla extract. Add the dry ingredients to the wet ingredients and either mix on low or using a wooden spoon until combined. Roll balls of dough in the size of a walnut and roll in prepared sugar afterwards. Place on baking sheet lined with parchment paper. Cookies will flatten out slightly. Gently press down each cookie with the bottom part of a glass. Bake the cookies for 10 to 11 minutes, or until very lightly browned on the edges. Let cool on baking sheets for a few minutes before transferring to a cooling rack. Cookies can be kept in an air-tight container for a few days.Summer Lemon Cookies

I love lemon. I always have. I like the smell, the taste, the color. Probably one of the reasons why I chose a lemon tart as my first blog entry. The good thing is that my husband also loves lemon. He is the citric guy anyway. He also enjoys oranges, limes, and grapefruit. The whole package. Even more the reason to try a recipe with a citric fruit. Why not go with a lemon recipe? So here I was looking for something lemony and then I found a delicious lemon cupcake recipe on an Austrian blog. Have you ever wondered what to do with leftover egg whites? Meringue is my new solution for leftover egg whites. Meringue is so versatile and it goes with almost everything because it has a rather subtle flavor. The best part of it is that you only need a litte sugar to create it.

Baking, in my opinion, is about sharing, it is about inviting others to a special treat. It may sound a bit pathetic, but I bake to bring joy to others. If somebody comes to me after having eaten something I baked and asks for the recipe, I feel happy and grateful. Sharing recipes is what this blog is all about. Yes, there are a million baking blogs out there, I know. I simply want to share some of the recipes I have enjoyed and I know others might enjoy as much. As there are so many good recipes out there already, I usually don’t create my own, but modify the existing ones to my liking. I always rewrite the recipes in my own words and I always link back to the original (you will find the link on top of the recipe). For my first recipe I chose a lemon tartelette. I chose this recipe, because I am in need of some color. Winter has been dragging on and I would like to sprinkle my surroundings with some fresh yellow. If you have ever been to France and tried a real tartelette au citron, you never want to go back. So tangy, so good! I especially like the little almond flour of the pastry dough, which complements the strong lemon flavor.
