Paska, ukrainisches Osterbrot

Has this ever happened to you? You want to make a specific recipe from your grandma. In my instance this was paska, the Ukrainian Easter bread. She even has two handwritten recipes in her tiny booklet. However, not even all ingredients are listed (such as flour) and there are no instructions. There is no oven temperature or even baking time. I did pull my hair when I realized that because my grandma passed away so I couldn’t ask her anymore. How am I supposed to make paska if there are no instructions and not even all ingredients listed? I remember that I confronted her on several occasions when she was still alive. Her reply was simple, you “feel” when the dough is right, you “know” how much sugar to add. Well, you may do if you make the recipe ten million times, but grandma, I am not you, I don’t feel or know anything! So instead I turned to Instagram and asked you guys if you knew of any good recipe. I was so astonished how many people actually replied and provided recipes to me. Thank you so much for that! I am so excited I got to make paska in the end, I had the chance of eating it during my childhood. My grandmother was born in the Ukraine in Odessa and she always served it for Easter.

Today I am going to introduce my nine favorite recipes from Uruguay. I was born in that little country in South America and was fortunate enough to live there for a few years when I was small. In 2016 I had the opportunity to go there on vacation again after I had lived in Germany for many years. It was so crazy how many memories came back. Obviously I had to try some of the most popular dishes again. The recipes I introduce below have all been tested with German ingredients in Germany since I live in Germany. Chocolate and caramel are the perfect combination, don’t you think? I at least find that they are the dream team. And for that reason I am offering something from my birth country Uruguay, namely empanadas. These can be filled with about anything and everything. I have posted the classic beef empanada recipe beforehand, but today I wanted something sweet instead. I went for dulce de leche. Never heard of it? This is basically a caramel made from sweetened condensed milk, it is eaten throughout Latin America and is probably as important as peanut butter is in the U.S. Of course you will find the recipe on this blog as well. You basically need to cover a can of sweetened condensed milk for two and a half hours. All tricks and tips can be found here.

Moin, or hello my dear friends! Today I brought along a special treat from the city I live in: Franzbrötchen! That’s Hamburg’s version of a cinnamon roll. If you follow me on Facebook, you will have seen questions about this treat because I tried several recipes before I was happy. Franzbrötchen is the signature dish from Hamburg. I can guarantee you, wherever you go in Hamburg, you will smell cinnamon as soon as you come close to a bakery. They are sold everywhere and I would say the smell of cinnamon represents Hamburg very much. Franzbrötchen are a mix of croissants and cinnamon rolls. They have lots of cinnamon and brown sugar, which may caramelize a little in the baking process, yum!
