Stroopwafels or syrup waffles are exactly what they say, a very thin and crispy waffle that is filled with syrup or, to use the Dutch word, “stroop”, hence the name. Stroopwafels are extremely popular in the Netherlands and are often sold as a Dutch souvenir. Apparently they were invented in 1810 by the baker Gerard Kamphuisen in the city Gouda. In 2023 they were part of the German show “Das große Backen”, which is a German baking competition. Obviously I had to watch the show and immediately thought of these delicious waffles, which I have always liked to eat. Just as a little anecdote: for my wedding a Dutch friend of mine brought along fancy stroopwafles as a wedding gift. However, my soon-to-be parents-in law happily munched them away while staying over in my apartment, blissfully unaware that these were meant as a wedding gift. So soon the stroopwafles had to be replaced. And in order for this not to happen again, I decided to create my own recipe. I tweaked a few I found online and was happy with the result. Below recipe can be made in Germany and uses a lot of common ingredients.
Today I am going to introduce the best Belgian waffles, thick and yummy! These are overnight waffles, the batter is prepared the night before and you basically need to heat your waffle iron the next morning to make this deliciousness. Perfect for any brunch plans, for a weekend breakfast or for anything fancy you wish to make for beloved family and/or friends. I love the crisp outside (you will get lots of tips for that below) of these waffles, yet their interior is nice and soft. Whisk together the ingredients the night before and let the yeast make its magic overnight. So simple, yet so yummy.
Spice waffles with mulled wine cherries! I love breakfast. I love eating breakfast, especially on weekends when I can get up early and have enough time at hand to make something special. I really enjoy making these waffles for a breakfast or bunch. Do you like using cinnamon, nutmeg, etc. also in January and February? Here in Germany you can buy already prepared spices mixes for gingerbread and I love buying in bulk shortly before Christmas to have the spices also available in January and February. I love making waffles with this spice mix, especially between Christmas and New Year’s when people are on vacation and are more relaxed.
Have you ever eaten pumpkin waffles? I hadn’t, I know, shame on me. But this year I somehow got into the pumpkin haze. So I cecked out Pinterest and found a lot of different recipes. Finally I encountered the recipe below and bam, I was hooked. These pumpkin waffles are super fluffy, I love that they are crispy on the outside, soft on the inside and tall and thick. I think they can be served either for breakfast, but also as a nice dessert.
Would you like to taste spring? Then I have this waffle cake with rhubarb compote and fresh straberries for you. Seriously, a dream come true. When I tried the first bite, I was hooked, so much wonderful and tangy rhubarb!
You can serve this waffle cake for brunch, so for your mom on Mother’s Day it is perfect. But if you keep the rhubarb compote, waffles, and whipped cream separate, you may also take this cake to your next picnic or even to the beach. Just be sure to only assemble it shortly before eating and keep the whipping cream chilled.
