Spice waffles with mulled wine cherries! I love breakfast. I love eating breakfast, especially on weekends when I can get up early and have enough time at hand to make something special. I really enjoy making these waffles for a breakfast or bunch. Do you like using cinnamon, nutmeg, etc. also in January and February? Here in Germany you can buy already prepared spices mixes for gingerbread and I love buying in bulk shortly before Christmas to have the spices also available in January and February. I love making waffles with this spice mix, especially between Christmas and New Year’s when people are on vacation and are more relaxed.
For me breakfast is really important, I don’t mind getting up a few minutes early to fix up something every morning for my husband and me. During the week I will make porridge or homemade musli, and on weekends I may make American Pancakes, Austrian broken-up pancakes called Kaiserschmarren, sweet yeast dumplings or Hamburg’s cinnamon rolls. If you prefer, you can leave out the spices in this recipe, replace them with some lemon or orange zest. I have another waffle recipe here, or you can also try my pumpkin waffles. What I like about these is that they are easy to prepare and you can add anything you like to them.
So as stated, you are free to add whatever you like. You may fold in chocolate chips, nuts, or dried fruits, or you may make it full vanilla. You can omit the cherries or replace the cherries with some apples or pears, feel free to adapt the recipe to your liking. I already made this cherry compote for the broken-up pancakes as I liked it so much, but what do you like to serve your waffles with?
These spice waffles with mulled wine cherries are simple to make and can also be made alcohol-free. For the waffles melt the butter and set aside. Then beat sugar and eggs on high until the batter thickens and is lighter in color, this takes a few minutes. Add all other ingredients except for the butter and mix until combined. Then add cooled-off butter and mix until combined. Heat your waffle maker acccording to instructions and bake waffles, I use about three tablespoons of batter for one square waffle. Meanwhile for the cherry compote drain the cherries and keep the juice. Bring the sugar, cinnamon, nutmeg and mulled wine to a boil and the reduce heat to a simmer. Take a bit of the cherry juice and stir with cornstarch in a mug until you see no lumps. Add to the mixture and let thicken, then add the cherries. Keep warm until your waffles are done and serve on top of them.
