Panchos Uruguayos or Urugayan Hot Dogs

Have you ever eaten a Uruguayan hot dog? Funnily enough, it is not similar to the Argentinian choripán, but has more resemblance with the New York hot dog as the same type of sausage is used. However, the toppings are completely different. You will find chips in the shape of fries and different sauces. Below I will also give you a recipe for homemade buns. Typically in Uruguay hot dogs are not literally translated as “perros calientes”, but are called “panchos”. I hope you enjoy this version of it.

I have to admit, I don’t remember eating hot dogs in Uruguay as a child. Even during my last holiday in Uruguay a few years back I didn’t bother. Mostly out of ignorance. It was only recently that I learned about the existence of “panchos”. I like these different toppings and ideas for making hot dogs, I hope you enjoy this Uruguayan version as below.

Panchos or Hot Dogs from Uruguay

Prep Time: 1hr Cooking Time: 20min Total Time: 1hr 20min

Panchos are the name for hot dogs in Uruguay. They are served with two different sauces, shredded mozzarella and chips.

Ingredients

  • Hot Dog Buns
  • 25 grams of butter
  • 150 grams of water
  • 50 grams of milk
  • Half a package of active-dry yeast
  • 450 grams of all-purpose flour
  • 45 grams of regular sugar
  • 4 grams of salt
  • 2 eggs
  • Optional: Sesame seeds

  • Salsa Creolla
  • 1 small onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 tomatoes
  • Olive oil
  • salt, pepper
  • Fresh parsley

  • Golf Sauce
  • Equal amounts of mayonnaise and ketchup
  • A splash of lime juice
  • Salt and pepper to taste

  • Filling
  • 8 hot dog sausages
  • Chips, preferably in the shape of fries

Instructions

1

In this reel you can see how I make them. For the hot dog buns melt the butter in a pot, then add the cold water and milk and stir. It should be lukewarm now.

2

Add all remaining ingredients except for the eggs to a large kneading bowl. Then seperate one egg and add the egg yolk plus the other full egg to the mix. Keep the egg white covered at room temperature, we will need it later on. Knead for about ten minutes on low with a machine or by hand. The dough will be very soft, but don't add flour. Lightly oil a bowl and place the dough into it, cover with a damp towel and let sit at room temperature for about 60-90 minutes or until volume has doubled.

3

Divide the dough into 8 equal pieces and shape each into a small hot dog (see picture). You may use a bit of flour as the dough will be sticky, but try to use it lightly. Place the mini hot dogs on a baking sheet lined with parchment paper and cover with a damp towel again. Let rise for another 30-60 minutes, they should be larger in size. Preheat oven to 190 degrees Celsius and brush with the egg white. If desired, sprinkle with sesame seeds and bake for about 15-17min or until golden. Use on the same day for best taste.

4

For the salsa creolla cut inion, peppers and tomatoes into cubes. Place into a bowl and sprinkle with olive oil, salt pepper, and freshly cut parsley. Mix this. If chilled, it will keep for a few days and flavors will intensify.

5

For the golf sauce combine all ingredients.

6

Assemble the hot dogs by placing a sausage that was simmered in hot water for a few minutes between the cut bun, add about a tablespoon of the two sauces, mozzarella and the chips. Enjoy.
