I asked you on Instagram and you all agreed, you wanted to get the recipe for ths cheesecake with apricots and crumbs. So here goes. I decided to make my favorite cheesecake with a pie crust (this is a very German thing to do) and fill it with lots of apricots (two layers) and sprinkle with some crumbs. Yes, I love crumbs on about anything. If you are not that much into crumbs, you can just leave them out, no problem.

You guys, finally I get to introduce something from Brazil on my blog. Did you know that you can find all Latin American recipes here? Since I was born in Uruguay and my husband is Colombian, you will find a lot of recipes from those countries on this blog. Yes, I also have a caramel custard from Peru called suspiro limeño on this blog and the gluten-free cheese buns from Paraguay called chipa are very popular. However, Brazil somehow hasn’t made it as of yet even though it has such a vast variety to offer and super delicious cuisine. Fruity Raspberry Sponge Roll (with Video)

This is a fairy dream come true. I made this fruity raspberry sponge roll the first time for our ten-year anniversary. Sooo good. This is a light and fluffy sponge base, filled with lots of raspberries and whipping cream infused with raspberry jam. This recipe is so delicious, I felt like filming it. So far there is only one more recipe video on my blog, if you would like to check out my brownie cookies, it has been the most popular recipe for a long time now. But let’s get back to this fruity raspberry sponge roll. I love sponge rolls because they only need between 8-9 minutes to bake. I find them perfect if you have company coming over. If you are a seasoned baker, you will be able to present a super delicious sponge roll in no time.

Apricot Sheet Cake just like from Granny

My granny was the queen of yeast dough. I cannot recall a single time that her yeast dough was anything else but fluffy, soft, and most delicious. I will never forget her sheet cakes prepared with yeast dough. Complimented with lots of fruit and crumbs, they were always a highlight for me. In low German these sheet cakes are called “plautz” and they have always been one of my favorite. I especially liked trying the middle piece of any sheet cake. This piece gives you a lot of fruit, a lot of crumbs, with just about the right amount of dough. My granny didn’t mind giving me the middle piece of a sheet cake. Which I of course loved. I have been thinking about her famous sheet cakes for a while now. However, since she passed away recently, I knew I had to bake a cake since she was not going to. I inherited her recipe book, which I cherish. But unfortunately, I didn’t find a lot of yeast dough recipes. Probably because she knew it by heart.

Shame on me,  I haven’t posted enough slab cakes even though I really like them. I prepared this simple slab cake with an abundance of strawberries and whipping cream the first time about a year ago when we had a large family gathering. I count myself lucky for having managed to snap a picture of a cut slice, it was gone within seconds, it took my relatives very little time to consume. No wonder, because it is so delicious.

If you are up for it, below I will show you a very German cheesecake with a delicious rhubarb and strawberry sauce. You wonder what makes a German cheesecake German? We love using quark. I believe you find that in Lidl ind Aldi nowadays also in places outside of Germany. Sour cream, cream cheese, quark, we love the combination of a lot of dairy products.

My Favorite Carrot Cake with Cream Cheese Frosting

Today I am presenting a classic American carrot cake with cream cheese frosting to you. The only difference? I cut back on the sugar. Especially in the frosting. Because I do think that American recipes are sickly sweet, I will never forget my first cake I ate when I spent a year in Canada after highschool in Germany. I only tasted sugar, nothing else. I really love carrot cake, I love the moist texture, the crunch you get from the nuts, I love the creamy frosting with this carrot flavor, so good! I love it all – if you give me the chance to taste something beside sugar. I already made this cake about a year ago, but back then I barely got a piece, it was gone so quickly. So I decided to try again. With my favorite recipe. However, due to the Corona virus, I had to wait before flour was in stock again. But I patiently waited and got lucky. And then, bam, I made this wonderful carrot cake again!

Third Blog Birthday and Strawberry Elderflower Cake

Where is the champagne? Where are the streamers and glitter? You are invited to a nice helping of this strawberry and elderflower cake! Why, you ask? I am celebrating my third year of blogging. The first recipe that went online on my blog was this lemon tart, which I still love to make. I honestly never thought I would be blogging for three years. I have always been a person who just learns things by doing them. Instead of figuring everything out beforehand, I just give it a go and see what happens. The reason I started this blog was because I got tired of having to pass on recipes I was asked to provide to my friends and family. I also wanted to have some kind of organization so I thought a blog may come in handy. I would have never believed that I would enjoy taking pictures as much as baking. Mind you, I once was a professional pianist, I always thought my visual ability was not as good. However, I am still enjoying my blog immensely, be it baking, food photography or anything else, and for that reason I hope there are many more blog years to come.
