Champignon Cookies

Some people don’t like mushrooms (who are you?), but I think you may enjoy these mushroom cookies. Emphasis on cookies. Think a melt-in-your mouth cookie with a nice vanilla flavor. If you like that kind of cookie, this one is for you. The awesome thing about these cookies is that a) they are a true showstoppers as they look so similar to real champignons, and b) that they taste delicious. So let’s get to it!


I decided to make a small batch of cookies as it is only the two of us at home. Depending on how large you roll the balls, you should get around 14 cookies. If you prefer more, feel free to double the recipe. I am not going to judge you.

Champignon Cookies

Serves: About 12-14 cookies

These champignon cookies look like mushrooms from above and have a nice vanilla taste.

Ingredients

  • Cookie Dough
  • 100 grams of all-purpose flour
  • 50 grams of cornstarch
  • 1 package (37 grams) of instant vanilla pudding
  • 60 grams of icing sugar
  • Zest of half a lemon
  • 75 grams of cold butter
  • 1 egg
  • 1 teaspoon of vanilla extract

  • Additionally
  • One empty plastic bottle
  • Some cocoa powder

Instructions

Weigh all ingredients of the cookie dough into a large bowl, then mix with your mixer until you have a crumbly consistency. Continue working the dough with your hands until you can form into a flat disc. Cover airtight and chill in the fridge for an hour or longer.

Roll dough into small balls the size of walnuts. First dip the bottle opening in water and then in cocoa powder. Now press the prepared bottle opening into the balls of dough from above so that you can see the mushroom from below. See video . Be sure to chill the cookies in the fridge for at least 15 minutes so that they keep their shape.

Preheat oven to 180 degrees Celsius, line a baking sheet with parchment paper. Bake the cookies for about 10-12 minutes. Let cool off and enjoy.
